This protein-rich egg salad is one of my favorite quick lunches.
Diced cucumbers combined with Dijon mustard mimic the flavor of pickles, which I love in traditional egg salad, but this one tastes much cleaner, with less sodium. No mayo needed, either!
I like to enjoy my egg salad stuffed into crunchy romaine leaves, but it would be delicious as a traditional sandwich or over your favorite salad ingredients, too!

Quick Egg Salad (Mayo-free)
serves 1
Ingredients:
3 hard boiled eggs
1 teaspoon of Stone Ground Dijon mustard, or to taste
1/4 cup diced cucumber
water, as needed for moistness
salt and pepper, to taste
Directions:
Mash ingredients together, adding water as needed for desired texture. Season with salt and pepper to taste, and serve chilled!

I have never heard of BodyRock but I love new and intense workouts!! I love TurboFire and Chalene Extreme!!! Great workouts!!!
I have only tried a few BodyRock workouts — they are so intense! I find myself doing the moves with poor form near the end though, so I don’t think they are a good choice for me.

I just tried this recipe today. I accidentally overdid it a little on the mustard so I will pay better attention next time! I used a splash of vinegar instead of water for moisture, and I think that helped with the “pickle” flavor. I had my egg salad with crispy romaine hearts, and it was yummy. Thanks!
