Last-Minute Tuesday

Have you ever had to make travel plans with very little notice? That’s my situation this week. I’ll be traveling for work over the next week and a half, so things are suddenly a little crazy over here!

Here’s how I handled my last-minute trip:

1. I went impulse-shopping. (Because I realized I haven’t updated my work clothes in far too long! I’m still wearing work pants from 2006.)

Luckily, I only walked away with these new earrings and a couple bright tops from Nordstrom Rack. Gotta stick to the budget, impulse or not.

2. I tried to eat up as much of our fresh produce as possible.

Which meant getting creative with my freshly made raw almond yogurt. I turned it into a creamy vegan salad dressing last night, and piled on the veggies!

I still only made a dent in our stash of leafy greens, so I hope Austin’s in a salad mood this week.

3. What I couldn’t eat, I tried to prepare and freeze.

We had a couple sweet potatoes that I didn’t want to spoil, so I whipped up a batch of Vegan Curry Sauce that I could freeze using the ice cube tray trick. Dinners are going to be really easy when I get home!

4. Packed any produce I could.

Cucumbers, lemons, and avocados (that aren’t too soft) travel really well! If you put them in your carry on, you’ll most likely get your bag checked (and a few weird glances from the TSA agent), but I much prefer that to wasting perfectly good produce.

I also plan on taking a bag of raw brownies with me for the flight. :D

5. Tried to look at the bright side.

With my unexpected flight, I suddenly have 3 hours on my hands to read The Hunger Games! I’m determined to finish the first book before the movie comes out in March!

    Safe travels Megan! I’ve only had to travel once for work (and I’ve only been at this employer for 1 1/2 years) but when I did I sort of do the same as you – pack as much produce as snacks as I can (before the border people take it away LOL!) use up as many veggies as possible before I go (hello salad beasts!) and make marinara sauce with any leftover tomatoes and fresh herbs. Have a great trip! :)

    Wow, way to prepare quickly!! I love the new earrings!!! I hear you on going shopping..I also am wearing clothes from way back when but I can’t seem to find anything that I like to replace them..ugh! Oh well, least of my worries! Have safe and happy travels!! :)

    I just started the Hunger Game on Sunday. Only on Chapter 2 right now, but I like it. I was determined to read it before the movie too. Enjoy, and safe travels.

    I hope your trip goes well. I definitley pack plenty of healthy snacks and a reusable water bottle. I also make sure my makeup (travel size) and 1 pair of clothes are packed in my carry on. If your bag gets lost, having to buy all new makeup is never fun!
