Ooh yum! I just made stuffed artichokes on the blog the other day, but the zucchinis look tasty! On my recipe radar right now is anything that involves watermelon, edamame, dill (but not all at once!) or anything that can be made in the Vitamix!
I am so intimidated by artichokes! I’ll have to check out your recipe and see if I’m brave enough to attempt it.
I love everything involving dill lately, too. Must be the season!

I think it would be fun to make crispy “onion shoestrings,” too! I used to love the crispy onions that went on top of green bean casserole! (I actually hated the casserole itself… but LOVED the onions)

You and I are totally on the same wavelength, that’s exactly what I’m doing with those cauliflower pizza bites today! Those shoestring zucchini fries look great too.
MMM! Stuffed zucchini pizza sounds great! I can’t help but thinking it might be a better idea to put the pizza junk inside a stuffed green pepper, and if you wanted to use zucchini, you could always just shred it and mix it in with the toppings..
