What I Ate: Thursday 4/12

Breakfast

Green juice! Kale, Romaine, cucumber, lemon, and carrots.

Lunch

Mixed green salad, topped with chopped tomatoes, cucumbers, and a generous portion of vegan cheese sauce.

Followed by a bowl of steamed cauliflower and zucchini, smothered in the rest of the cheese sauce.

Snack

Raw almond butter + coconut oil + cinnamon. The almond butter and coconut oil are so naturally sweet, it’s like dessert!

Dinner

Mixed green salad, topped with roasted red peppers, steamed beets, and organic chicken, dressed with a homemade lemon dressing. (the dressing wasn’t very good… I won’t be making it again.)

Followed by 5 oz. of spinach and a whole zucchini, sauteed in grass-fed butter with a pinch of Himalayan salt. So simple, and so good!

Post-Dinner

I always need a little something after dinner, and since all the dark chocolate I was eating was starting to affect my ability to fall sleep, I’ve switched to tea for a while. I enjoyed a cup of maple-y slippery elm tea, followed by a cup of Bengal Spice tea, with almond milk.
