Morning
Un-pictured: Water, probiotics, and lots of coffee with homemade almond milk creamer.
Green smoothie! This one included 2 cups fresh spinach, 1 frozen banana, 1/2 cup organic raspberries, 1/2 a ripe avocado, 1 tablespoon cocoa powder, 1 cup water and a handful of ice. I was going for a chocolate-covered-raspberry flavor, but it didn’t quite taste like that… so I might just leave out the cocoa next time.

Lunch
Un-pictured: Fermented cod liver/butter oil supplements
Baby kale salad, massaged with a generous portion of creamy tahini dressing and topped with chopped bell peppers and cherry tomatoes.
Followed by a few samples of a raw dessert experiment. The nice thing about making raw desserts is that they ALWAYS taste good.

Dinner
Un-pictured: Raw baby carrots, while preparing dinner
An entire bag of mixed greens, topped with an organic chicken breast, cherry tomatoes, homemade sauerkraut, dressed with lemon juice and dijon mustard.

Dessert
I’ve been whipping up this “raw chocolate” concoction lately–> it’s simply coconut oil, cocoa powder and honey mixed together. (I’m still working on my favorite ratio, so I’ll share specifics later.) It’s like frosting at room temperature, and solidifies when chilled!
Delicious, either way.

Reader Feedback: What are YOU eating this week?

I’ve been enjoying lots of salads! Loving all the greens available at the farmers markets now. Have been starting off my mornings with homemade granola and sheep’s milk yogurt or banana walnut quinoa bakes!
Your mornings sound fantastic! I love granola and yogurt.
Like Danielle, I’ve been eating tons of salads too! I love not having to heat up the house, and find myself not really craving cooked food much, apart from sometimes at dinner. Most of my meals are big salad beasts with tons of veggies and some sort of fish (tuna or basa usually), or a mix of beans (edamame, navy, chickpeas). In fact, today’s lunch is spiralized zucchini, a bunch of chopped peppers, celery and cucumber, with chickpeas and navy beans and raspberry balsamic. I’m already excited about it!
I’ll definitely be checking back for the details of this “raw chocolate” awesomeness
all of that look delicious!! i’m all about simple but still really tasty. loving the warmer weather here in NY and fresh vegetables to finally change things up!
This afternoon I had a smoothie with almond milk, chia seeds, cocoa powder, frozen banana chunks, frozen cherries, and spinach. It wasn’t that chocolately, though, so like you, next time I may just leave it out!
I think you have to use a LOT of cocoa to make it taste chocolatey! At that point, I’m afraid the caffeine would leave me “buzzing” the rest of the afternoon.
Your smoothie sounds tasty, too!
Do your green smoothies make you feel really stuffed after? I love them so much, but I just feel so full after I drink one! Just wondering if it is me or if it makes everyone so stuffed
Mine are typically: 1 frozen banana, some frozen pineapple, some fresh or frozen strawberries, 2 cups of spinach and either water or kombucha. Any idea if it’s what I’m putting in it or is it just really filling? Sorry if that sounds silly!
It doesn’t sound silly! I think smoothies make a lot of people feel really full. Part of the reason, is that we tend to drink them faster than it would take for us to eat all of the ingredients separately– so it may be too much, too fast for our digestive systems. Also, fruit can cause some bloating, so that may be part of the cause, as well.
Some experts recommend “chewing” your green juices and smoothies, to help activate saliva and start the digestion process in the mouth (which would happen if you were eating, rather than drinking) so perhaps that might help?
I see where you drink a lot of coffee – is it decaf or regular? I love my coffee and in the raw food world they frown on it, so was wondering. Your chocolate dessert looks yummy
I drink regular coffee! I don’t think decaf is any better, since it’s often chemically processed to remove the caffeine. Obviously, coffee in general isn’t ideal, but it keeps me emotionally satisfied during my early mornings at work, which is important, too!
I have a 16oz cup every morning – at night on occasion, I feel like I can function better with it (addiction? Maybe) but love the taste
My work day starts at 6am, so I definitely function better with it, too! And yes, it may also be an addiction on my part.
(One that I’m okay with for now!!)
Hey Megan! Can’t wait to hear the details of the raw chocolate concoction! I am a sucker for chocolate!!!
A little late on the comments, but could you share your feelings about the fermented cod liver oil blend you’ve been taking? I am thinking of ordering some but it’s so dang expensive!
To be honest, I haven’t felt much difference since I started taking them– but I also haven’t been very consistent, so that may be the problem. I plan on finishing off the bottle, so I’ll let you know if anything changes.
