Considering my travel schedule this month, I haven’t been able to experiment in my kitchen as much as I’d like to. However, I’ve had plenty of time to peruse the internet, and have found some recipes that I’m excited to try when I’m back!

I’m more drawn to the general idea of this, rather than the specific recipe–> I’m thinking some soft goat cheese, spinach and herbs wrapped up in eggplant noodles and baked in marinara sauce, would make a fun and tasty dinner!

Featuring nutrient-rich chia seeds, this dairy-free pudding is blended for a creamier texture–> a fun change from the traditional “tapioca” texture of most chia pudding recipes.
(It’s properly combined, to boot!)

It’s been far too long since I’ve had a falafel, and this baked sweet potato version sounds fantastic. The recipe calls for chickpea flour, but I image any type of flour will do.

Calling for only a few ingredients, this is my kind of ice cream.
You don’t need an ice cream maker, but you will need a high-powered blender that can crush ice cubes into an ice cream consistency, like the Vitamix. (The tamper will come in handy for this, too!)

I love broccoli, but I hate how it stinks up my kitchen when I cook it! Luckily, there’s no cooking involved when it comes to making this broccoli slaw.
With a few tweaks, like using goat yogurt instead of mayo and buttermilk, I have a feeling this could become a new favorite!
