What I Ate Wednesday

Morning

Un-pictured: Water, probiotics, and lots of coffee with homemade almond milk creamer.

Fresh green juice, including a heart of Romaine, 3 large carrots, 6 kale leaves, 3 large celery stalks, 1/2 a cucumber, and one lemon.

Followed a little later by a sample bag of Tahitian Vanilla Bean raw walnuts. (Disclosure: This was another sample sent to me by Living Nutz.)

These were tasty, but I was really wishing for another bag of Banana Bread Walnutz… they’re addictive!

Lunch

Mixed green salad topped with cherry tomatoes, fresh dill, lemon juice and Dijon mustard.

Followed by three eggs, scrambled in grass-fed butter and crumbled raw goat feta. (I add the raw feta in after removing the eggs from the heat, to keep it from melting too much.)

Un-pictured: One row of Endangered Species Forest Mint dark chocolate… this day called for some extra chocolate.

Dinner

Arugula and spinach salad, topped with tomatoes, steamed beets, crumbled raw goat feta and lemon dressing.

Followed by half a head of cauliflower florets, a whole zucchini, and half a red bell pepper all steamed together, and topped with the rest of the block of raw goat feta.

Dessert

I managed to polish off the rest of this bar while watching four hours of the Olympics last night!

I don’t know why eating sweets is so appealing while watching athletes compete… it makes no sense.

  • Yum, your eats always look so tasty! Let’s see, I am getting back on track after a lot of snacking on the weekend…Whole Foods local vendor fair got us! I have been having my normal green smoothies, salads, etc. but I had some amaranth breakfast cereal for a snack Monday night which was new…my body was just calling for some grains, however, I have decided, I just feel better when I don’t eat much grains. Oh, the other thing, romaine and/or seaweed wrap with shiritaki noodles with edamame dip for the sauce…mmm :) Have a great day!

  • I plan on starting to finally use my juicer, and I’d like to have my juice in the morning but don’t want to wake up my husband! Do you think it would still be good sitting in the fridge overnight, or would you recommend making the juice right before you drink it?

    Ok, I am dying to know what one of these smoothies tastes like. I only recently (over the last 5 years or so) have enjoyed eating vegetables. Before, I had to cover things with cheese or sauce of some sort, but my tastes have definitely changed. Enjoying a smoothie like this though is hard for me to wrap my mind around, although I’d love to be able to! When I think smoothie, I think chocolate, vanilla, strawberry, etc. lol. So, what exactly does one of these taste like? Are they enjoyable or do you feel like you have to gulp it down to get it over with?

    • The green juice pictured above actually went through a juicer, so the pulp has been removed, unlike a smoothie, which is thicker. It tastes like a green-ish lemonade to me– and smells like a garden. I love it! But, I think it is an acquired taste. A good starting point is adding extra carrots and lemon to cover up the “green” taste!

  • The green juice looks delicious! I’ve been looking for some new recipes for juicing- so I’ll have to try this. The carrots definitely help give it some sweetness, and the lemon “takes the edge off” the kale and romaine. :) Love your blog!

    Sweets and the olympics…yeah, me too! Last night it was your frozen banana peanut butter smoothie that I put lots of chocolate chips in :) I love the olympics!

    Hi, I just found this new zero calorie sweetener at my store, called Zero by Wholesome Sweeteners. It’s made from Erythritol which I’ve never heard anything about and I was just wondering what your opinion on it is as a safe healthy sweetner? I just can’t get over the after taste of Stevia and I do use honey for all my sweetening but just thought it would be nice to have a zero calorie option sometimes. Thank you! I totally look up to your clean eats!

    Hi! I absolutely love your website and your recipies:) I just moved into a new apartment and I finally have room for my juicer! One of the first things I tried was your morning green juice and I love it. Like I’m hooked. I cut up a watermelon and added part of the rind (which is full of nutrition) to it, and it was really good as well!

    • I’m so glad you’re enjoying the green juice! I love juicing watermelon rinds, too– they’re surprisingly juicy, aren’t they? Gotta love that extra boost of chlorophyll, too! :)

    What goat yogurt do you use?

    Are you still on Natalia roses program what are you following ?

    • I find the raw goat feta at my local Whole Foods– Redwood Hill Farms is the brand. The same brand also makes goat yogurt, though I prefer Capretta’s brand, as they use less fillers.

      Having trained with Natalia, I’m definitely highly influenced by her work. However, I find that I feel best when I don’t follow any program strictly. Sticking to natural, whole foods as often as possible works for me! :)
