Leftover Cranberry Salad Dressing

I love finding new ways to dress up my leftovers.

Take this salad dressing, for example. It’s made with a simple mix of leftover cranberry sauce, vinegar and olive oil, and it transforms an ordinary salad into a delicious treat.

Use this dressing over a bed of mixed greens, topped with your favorite leftover veggies and sliced turkey for an easy post-Thanksgiving meal. No need to turn on the oven! It will feature all of the holiday flavors you love, with a healthy dose of nutrients, to boot!

Leftover Cranberry Salad Dressing
makes 1 cup

Ingredients:

1/2 cup leftover cranberry sauce
2 tablespoons balsamic vinegar (or vinegar of choice)
2 tablespoons extra virgin olive oil
1/4 cup water

Directions:

Combine all of the ingredients in a high-speed blender, and blend until smooth. Adjust the amount of vinegar to taste, if necessary, and chill for 30 minutes before serving.
