What I Ate Wednesday

We just returned home from a relaxing vacation in Oregon, so our fridge situation is pretty grim. Arriving home at midnight doesn’t leave much time for grocery shopping!

Below you’ll see what my meals look like when I don’t have much fresh produce to work with…



We almost always have a good stash of frozen fruit in our freezer, so I started my day with a fruity smoothie of frozen bananas, strawberries, and a ripe avocado blended with water and a bit of raw cacao powder.



I threw a couple of ripe pears in the fridge before we left for our trip, hoping they’d survive while we were gone. This one lasted pretty well, so it made the perfect snack when I got hungry again. I’m loving pears lately! (I think I ate one every day of our trip, too…)


A little later, I enjoyed two pasture-raised eggs fried in butter, and topped with nutritional yeast.


Even later, I steamed up a large white-fleshed sweet potato. (Thank goodness for their long shelf-life!) Topped with grass-fed butter and salt, this was the perfect sweet-and-salty combination.



We ended up meeting some friends for dinner at a brewery, and I was happy to see they offered some decent salad options! I ordered a large spinach salad, which was topped with Roma tomatoes, poached pears, goat cheese and toasted hazelnuts, dressed with a simple vinaigrette. (Not properly combined, but that hasn’t been a huge priority for me during pregnancy.)

When we got home, I finished off the evening with a Raw Key Lime Tartlet.


Thank goodness for my dessert stash in the freezer!

    Even pears on your salad! lol 🙂 I’ve been having green smoothies for breakfast, however, they’ve been causing a bit of an upset stomach..possibly due to too much chia/flax I’m thinking-I’m sensitive to too much fiber at once. Plus, lots of salads with delicious homemade crackers that I’ve recently added parsnips to…yum! Oh, and I got goat’s yogurt yesterday which I am highly fond of!

    In my freezer now I have “candy bars” recipe from Gwyneth Paltrow’s new book “It’s all good”. They are yummy! Trying hard to stick to one little square a day.

    Megan, Thank you for the info! I have been following your website for quite a while, but never left a comment. I LOVE your recipes! My parents-in-law even love your dessert ones! I wanted to know with regards to this recipe, do you think you could you purchase multiple cans and whip it up in your high-powered blender in a bigger batch?

    Yes to pears every day! Actually, I prefer mine straight from the freezer as opposed to at room temperature – it adds a nice crisp bite and is much more refreshing in my opinion. Then again, maybe I’m just a little odd :).
    And yes, I always have some food in my freezer even when returning from vacation. I’m happy to hear you had a nice and relaxing one in Oregon.

    I’ve been eating apples like crazy, but am inspired by this post to add a few pears to my diet! I made your raw cheesecake this week and have been snacking on that every night as well.
