Let’s be honest…
Broccoli stems aren’t very appealing on their own.
But since I didn’t want to waste ANY of these perfectly good veggies–> I pulled out my Salad Shooter and got to work!
In just a matter of seconds, I had a bowl full of fresh broccoli slaw! You could use this “slaw” as a salad topping, for extra crunch and texture!
You could cook it up, like I did, as a fun “elbow” pasta!
You don’t even need to use any oil when you heat this up– just a splash of water will do the trick! I simply sauteed the “elbow pasta” in a skillet for 3-4 minutes, until tender but still slightly crunchy, then added in my sauce– today it was leftover Vegan Mac n’ Cheese Sauce! (but any sauce will do!)
Once it’s thoroughly heated, serve immediately!
It’s delicious topped with an extra dash of nutritional yeast and sea salt. I’ve enjoyed this dish for the past two days, and I’m not sick of it yet!
Reader Feedback: What’s your favorite pasta dish? Favorite type of noodle? I used to be all about spiralized zucchini noodles… but I think these broccoli “elbows” are my new favorite! They hold up to the sauce a little better than the zucchini version. I can’t wait to try a cheesy pasta-bake with them!
