Let’s be honest…

broccoli stems Broccoli stems aren’t very appealing on their own.

But since I didn’t want to waste ANY of these perfectly good veggies–> I pulled out my Salad Shooter and got to work!

shredding broccoli stems In just a matter of seconds, I had a bowl full of fresh broccoli slaw! You could use this “slaw” as a salad topping, for extra crunch and texture!

You could cook it up, like I did, as a fun “elbow” pasta!

shredded broccoli stems in pan You don’t even need to use any oil when you heat this up– just a splash of water will do the trick! I simply sauteed the “elbow pasta” in a skillet for 3-4 minutes, until tender but still slightly crunchy, then added in my sauce– today it was leftover Vegan Mac n’ Cheese Sauce! (but any sauce will do!)

Broccoli noodles in pan with sauce Once it’s thoroughly heated, serve immediately!

Broccoli Elbow PastaIt’s delicious topped with an extra dash of nutritional yeast and sea salt. I’ve enjoyed this dish for the past two days, and I’m not sick of it yet!

Reader Feedback: What’s your favorite pasta dish? Favorite type of noodle? I used to be all about spiralized zucchini noodles… but I think these broccoli “elbows” are my new favorite! They hold up to the sauce a little better than the zucchini version. I can’t wait to try a cheesy pasta-bake with them!

Broccoli slaw is a-may-zing. I wish I could make it myself and avoid buying it in bags all the time!

I am all about making pasta with spaghetti squash. In fact, it was dinner for me tonight. ๐Ÿ™‚

Crazy Sexy Diet is amazing!! The best “diet” book I have ever read. Speaking of CSD and broccoli stems, Carr recommends juicing them for a little sweetness. Enjoy the new read!

Love this!! I would have never thought to make pasta/slaw out of broccoli stems.

interested to know your thoughts. I read/skimmed Crazy Sexy Diet last night. It’s all pretty much stuff I’ve read before but she does have a fun attitude. don’t really like the emphasis on dense (and sooo high priced) raw treats and on soy products. but she’s super fun to read.
