Cheesy Broccoli Mash

Who stayed up to watch the Royal Wedding last night? We sure did!

I thought Kate’s dress was perfect!!


I considered making a special theme dinner to celebrate the big event, but the first traditional English meal that popped in my head was Bangers and Mash. Since sausage and mashed potatoes aren’t exactly my taste, I opted for a different kind of “mash,” instead:

Cheesy broccoli mash!! This was beyond delicious.

After all, you really can’t go wrong when there’s broccoli and cheese involved.

Cheesy Broccoli Mash
serves 2


12 oz. fresh broccoli florets, chopped (about 3 cups)
1 oz. raw goat cheddar, shredded (or cheese of choice)
1/4 tsp. sea salt
3 cloves roasted garlic


Set your oven to 400F. Place a few garlic cloves on a dry baking sheet, and let them roast for 15 minutes, until soft and aromatic. (I did this while re-heating Austin’s veggie burger in the oven–> multi-tasking!!) 😉

Meanwhile, in a covered sauce pan, steam the broccoli in a half-inch of water until fork-tender, about 5-6 minutes.

The roasted garlic should be easy to peel, and mushy inside– like a garlic spread. (Yum!)

Throw three cloves of roasted garlic (you could roast more and save some for later!) and the steamed broccoli into a food processor, and season with sea salt:

Process until creamy!

Now, for those of you who would like to keep this vegan– you could stop right here and have a VERY tasty side dish!

I almost did.

But then I remembered I had already shredded some goat cheese, so why not make this a little more decadent?

Yes, please.

Serve piping hot, and garnish with a little extra shredded goat cheese!



This dish was so rich and decadent. I love broccoli in pretty much ALL forms, but I love how this puree distributed the garlic-cheesy flavor so well! I loved tasting it in every bite!! It’s always fun to change-it-up on the texture-front, too.
