When it comes to snacks, I know we can all use some quick and easy options.
So I’m excited to share this new video with you, featuring four of my favorite healthy snacks. They’re perfect for both kids and adults alike, and can be ready in no time. I hope you enjoy them!

- Zucchini Roll-Ups. These roll-ups are a fun twist on traditional veggies and dip, and are still quick to prepare. Simply use a mandolin slicer to slice a zucchini lengthwise into paper-thin slices, then spread each slice with zucchini hummus, and roll them up into bite-sized rolls. The texture is amazing this way, and you can use any other dips or dressings you like to change-up the flavor. (Cucumber works well for this, too!)
- Ants on a Log. This is a classic childhood snack that couldn’t be easier to prepare. Simply fill sliced celery stalks with raw nut or seed butter and top them with raisins, which look like cute little “ants” crawling up the log. I used Made in Nature raisins, because their products are always organic with no sugar added.
- Stuffed Dates. This is one of the easiest snacks ever and takes less than a minute to prepare. Split a Medjool date in half, remove the pit, and spread each half with raw nut or seed butter, such as almond butter, sunflower seed butter, or tahini. I serve these to my son as is, but I also like to sprinkle mine with a bit of coarse sea salt for a sweet-and-salty treat.
- Mini Eggplant Pizzas. Eggplant becomes surprisingly bread-like when it’s baked, making an easy one-ingredient mini pizza crust. To prepare the eggplant crusts, preheat your oven’s broiler and peel the outside of the eggplant lengthwise leaving “stripes” of skin– you want to leave half of the skin on to help the eggplant hold it’s shape, but you don’t want to leave all of the skin on because it’s too chewy when biting into the final pizzas. (You can see an example of what the final eggplant looks like in the video.) Arrange the slices into a single layer on a baking sheet and broil them until lightly golden, about 5 to 7 minutes. Flip them over and broil until golden on the other side, too. Top with your favorite pizza toppings, like marinara sauce and cheese, then broil again until the cheese is bubbly, about 3 minutes. Serve warm!
