Rose Cleanse Day 3

Yesterday was a busy day.

While I was feeling a bit tired during the first two days of this cleanse, I finally felt a surge of energy yesterday! After my second juice of the day, instead of feeling like a nap, I felt like knocking out a 30 minute Physique 57 DVD–> which felt amazing.

Not so amazing today… since my whole body is sore. But I think another workout today will actually help with that. Or maybe a massage. ๐Ÿ˜‰

There really is something to that whole “a body in motion stays in motion” idea, because I spent the rest of the evening busy moving in the kitchen! My hope is that Austin will LOVE these super-healthy dinners I’m preparing this month soooo much, that he’ll want to continue eating this way long after the challenge is over!

So, I decided to pull out the “big guns” last night, and used some recipes from the brilliant Doris Choi.

First up, was a Mushroom & Sage Loaf, which is entirely veggie-based:

Doris first released this recipe exclusively for members of the Detox Community a few years ago for Thanksgiving– and while I was taste-testing along the way, it tasted like the BEST stuffing I’ve ever had! I actually might stop at that point in the recipe from now on, since adding the last few ingredients changed it more into a “meatloaf,” and Austin and I would probably rather eat stuffing. ๐Ÿ˜‰

While the loaf was baking away, I got to work on our side dishes.

Mashed cauliflower with mushroom gravy! The mushroom gravy was so easy to make, and will most likely be the only gravy I make from now on. Austin and I both loved it!

We were also surprised at how much we enjoyed the mashed cauliflower… since Austin is such a (boxed) mashed potato snob. ๐Ÿ˜‰ Doris provided a recipe for the mashed cauliflower, but it looked a little too mature for our taste buds, so I winged it on that one.

Mashed Cauliflower
serves up to 4

Ingredients:

1 head steamed cauliflower
1 tsp. ground thyme
3 cloves roasted garlic
1 tsp. sea salt, or more to taste
1 tsp. dried chives
ground pepper, to taste
water, to facilitate blending

Directions:

Process all the ingredients together in a food processor, and adjust seasonings to taste.

Serve piping hot!

Austin and I both went back for second helpings of the mashed cauliflower and gravy, so you know it was good!

I’ve got some fun plans for our leftover mushroom loaf for tonight’s dinner, too, so things are looking good over here. ๐Ÿ˜‰

Austin and I are both a little nervous about our first weekend on this challenge, as it’s usually the time when we let loose on our diets, but I know we’ll be fine. We’ve already made some exciting dinner reservations to celebrate my birthday (early) on Sunday night, so we just need a good meal on Saturday night to get us through. Oh, and Austin will actually be around for lunch… which could prove challenging, since I don’t usually have to worry about that during the week! We may resort to dining out for lunch, since we have some pretty awesome options here in LA– where we can get a veggie-centric meal for him, and a pressed juice for me! Or, Austin may get used to sipping on smoothies for lunch. We’ll see how it goes!

I’ve got another Pressed Juicery delivery coming my way, so at least I’m covered in that department. ๐Ÿ˜€

ugh, hate that run down feeling a few days into a cleanse…. but the surge of energy is great!!! don’t you feel like a new person (kinda the reason behind most cleanses).
Do love the look of that gravy, may have to make some, since going vegan we’ve all missed gravy…..
