Truffle, Noodle & Cookie Trials

We’ve been trying a lot of new stuff in our house lately, so I thought I’d do a little round-up today to share some of our favorites!

Goat Cheese Truffles

Rande posted this truffle recipe on her blog last month, and I couldn’t believe how simple they were to make! I think they’d make an elegant dessert for any goat-cheese lovers in your life. 😀 (Austin is NOT a goat cheese fan, so he didn’t care for them… they definitely have a goat-y flavor. Which is probably why I love them!)

Paleo-Friendly Noodles

Since spaghetti squash has been MIA at our grocery stores lately, I’ve been on the hunt for a good grain-free noodle for Austin. He’s not a huge fan of zucchini noodles, and the sweet potato “noodles” I make for him don’t pair well with all sauces, flavor-wise.

So, when we saw these Miracle Noodles at Whole Foods the other day, we decided to give them a shot!

It actually freaks me out when a package of noodles has zero calories–> how does that work?? I was also seriously put-off by the smell of these noodles, as I was draining them. The smell is… weird. But, it does go away after rinsing the noodles according to the package directions.

Austin was actually quite a fan of these guys!

Last night, I served them in a Sweet Potato Curry Sauce, and I’ve tried them in Veggie Chow Mein, as well. Both ways were a hit, so I guess these noodles are here to stay.

Weird smell, and all.

Hair Ties

I feel like I’m a little late jumping on this new hair-tie bandwagon…

A friend of mine gave me my first one with a birthday gift last month, and now I’m totally hooked! These hair-ties don’t leave massive “crimps” in your hair, and look so cute on your wrists– like a bracelet! I ordered the set above on Amazon, but I’ve heard there are also some cute prints available at Nordstrom, too.

Couch to 10K Running App

I typically use my Gymboss to time my running intervals, but when I heard about this Couch to 10K running app, I was intrigued!

[source]

This 14-week training program has you run just 3 times a week, with a voice “coaching” you when to run and when to walk! I tried it for the first time yesterday, and am already sold. I’d gotten awfully lazy with my cardio over the past few months, so this is just the motivation I need to push myself back into a running routine!

Vegan Banana Coconut Scones

Okay, so these aren’t really new. They’re just a new format for enjoying my Banana Coconut Muffins! I didn’t want to waste cupcake liners, so I simply scooped the batter using a 1/3 cup, and dropped 8 mounds onto a baking sheet, lined with a Silpat. Bake the scones for 15 minutes at 350F, turning halfway through baking, then allow to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Austin’s breakfast for the week is solved! 😀

Grain-Free Cinnamon Raisin Cookies

After all that cookie talk yesterday, I couldn’t wait to try my hand at a batch of grain-free “Oatmeal” Raisin Cookies!! I think I nailed the flavor, but the texture is off… Austin and I both agreed they needed some tweaking. After each stuffing our faces with the samples, of course.

The next batch might have to wait a while–> I’m kinda cookied-out.

(Never thought I’d say that!)

Rande @ The Vegetable Centric Kitchen

Yay, I’m so glad you liked the truffles!! I’m pretty excited to make them again. I’ve been really curious about those “miracle noodles” too, maybe I’ll try a bag!

Felicia

those noodles look realllly interesting! next time im in WF i’ll have to look for them. and i’ll be keeping an eye out for those grain free cookies!

Amber Shea @Almost Vegan

I love shirataki noodles! I usually rinse the hell out of them, then drop them in boiling water for a couple minutes to get ALL the smell out. Then they’re great!

    Megan

Thanks for the tip– that smell is STRONG! I actually thought something was wrong in our kitchen the first time I used them… then I realized the smell was coming from the noodles! Holy cow.

But, they really do have a cool texture once that smell goes away, so I guess it’s worth it!

Pure2raw twins

never tried goat cheese truffles! they sound delicious!! we have gotten back into juicing and have been loving it

    Megan

So glad you’re juicing again! We’ve been keeping up with it every morning, and it makes me feel so good. 🙂

Angela @ Eat Spin Run Repeat

Oooh yay I’m so glad you’re hard at work on the oatmeal raisin cookies! I love shirataki noodles but I agree with you that the smell is totally rank! Every Tuesday I do as many new things as I can, and I just posted this week’s re-cap of my new features, which included a vegan tofu-based recipe of the week, a new Lululemon outfit, and a granadilla (which is a type of passionfruit). You can check it out here if you want! http://wp.me/p1Y0xO-38l

Looks like a lot of fun stuff, Angela! Love that new pink top. 🙂

I am loving goat cheese and yogurt so I can’t wait to try the truffles! I tried your curry sauce which was tasty..I haven’t used Indian spices much so this was a good change! I adore your coconut muffins..I have made a variation almost weekly…so tasty!
I have noticed the more i use coconut flour, the more bloated my stomach feels, I know that I can’t do much of it so I sub almond meal, etc. Do you notice anything different when using coconut flour?

Have a great day!

    Megan

The coconut flour is definitely dense and packed with fiber, so that could possibly lead to bloating. I know most recipes call for another type of flour to pair with the coconut flour, to reduce the fiber, so feel free to experiment! From experience, I can tell you almond flours and pulps don’t work well in totally vegan recipes like that one, though– they do better with eggs, for structure.

oooh, the goat cheese truffles sound DIVINE!! i am on my 4th week of the Detox journey (started following Kimberley Snyders Beauty Detox Diet) and am amazed at how food combining can make such a difference! i stumbled across your site, and now i am HOOKED. you are such an inspiration, and your recipes are all so wonderful! my husband is even hooked on Green Smoothies every morning instead of donuts!

quick question, if you don’t mind….i am looking to lose some weight while continuing this lifestyle change. any tips on what to eat/avoid? with all of the nuts, avocados, and coconut oil, i’m wondering if i am just replacing fats in meat/cheese/etc, which fats from these other sources. and cheese…oh how i love cheese…how much goat cheese can i realistically eat in one day?

keep up the amazing work!

suman 🙂

I’m not sure if you’re going to get this post considering you wrote this awhile ago, but I just got my ipod nano (same one as you have) and I downloaded the running app but it’s not showing up on the ipod-can you tell me how you got it on your ipod please?

    Megan

I actually used that app on my iPhone! I was hoping it would work for my iPod nano, too, but I found out it doesn’t allow you to add any new apps. Bummer!
