Tuesday Things

1. I’m traveling for work again, which usually leads to me spending WAY too much time in the local grocery stores.

I love finding new products that my usual stores don’t carry!

bar of lily's dark chocolate

Like this Lily’s dark chocolate bar–> that’s sweetened with stevia! I haven’t been using stevia much lately, but I just had to give this chocolate a try.

I brought it to share at a Bachelorette “watching party” last night, and we were all pleasantly surprised with the flavor of this chocolate. It doesn’t taste like a sugar-free bar!

2. Also served at our party last night? Sushi.

Not the kind of sushi you’d expect, though.

plate of sushi made of rice krispies and gummy wormsThis one was made with Rice Krispies treats, fruit roll ups and gummy worms!

I’ve never cared for fruity candy OR Rice Krispies treats (I hate marshmallows), so this wasn’t my kind of dessert… but it has inspired me to try making a dessert sushi of my own! Mine will probably involve chocolate.

3. Speaking of dessert, if you happen to have some shredded coconut on hand, I highly recommend adding it to a batch of macadamia nut fudge.

I added a 1/4 cup to my most recent batch, but I think I’d even increase it to a 1/2 cup next time. Simply grind the coconut down with the macadamia nuts, and follow the rest of the recipe as directed! (You could also just stir in the unsweetened coconut, for added texture, if you prefer.)

making macadamia coconut fudgeThe added coconut is such a fun twist! It’s still as buttery as the original, but with an extra-punch of tropical flavor.

I don’t know which version I like better… they’re both pretty addictive.

4. I also happen to be addicted to fresh dill at the moment.

bowl of saladI’m adding it to everything lately! I highly recommend adding a hefty dose to your salads to take the flavor over the top!

I even went so far as to add it to my homemade guacamole. I don’t recommend trying that at home.

I guess dill really isn’t meant to go on everything.

5. I bought a new Camelbak water bottle last week. I was skeptical of their claim that this bite-valve increases your water intake throughout the day, but now that I’ve tried it, I’m a believer.

I still can’t tell you why I drink more water out of it, but it works! Great for staying hydrated during these hot summer days.

Reader Feedback: What are YOU up to this week? Any fun desserts you’ve tried lately?

Yay for Lily’s bars! I’m so hooked on them. I know what you mean too- I can’t resist spending way too much time in new-to-me health food stores! I’ve been really into dill lately as well and actually managed to make a really tasty avocado dip with it.

    Megan

You’ll have to share your secret to this avocado-dill dip. ๐Ÿ™‚

I have a water bottle like that purchased at my sons college a few years ago. I love and agree, you do drink more water. My husband even started using “my” bottle so I had to get him his very own.

I’m not a sweets person, but your sushi is SO cute! I’d love to play around with making it.. then I’d just give it to someone that likes lots of sugar lol! Sounds like a fun week for you! This week is a pretty relaxed one for me. I just did an 8 mile run this morning (my longest distance since my ankle injury hit 2 months ago) so I’m feeling pretty happy today… oh and I’ve been eating my body weight in watermelon. That is all. ๐Ÿ™‚

    Megan

Congrats on the 8-mile run!! Watermelon sounds like the perfect fuel after that. ๐Ÿ˜‰

Claire @ Live and Love to Eat

That candy sushi is too cute!

Sara

I have that same water bottle and I had no idea what the little plastic cap was for so I threw it away! Bummer, but I do find that I drink more water out of this bottle. Usually one in the morning and one in the afternoon.

Hi Megan

I have two question for you.
When should I drink my coffee before green juice or after it?
I know you love organic products me too, but I do have problem I mean we have lots of organics, but te problem is that for example fruit is unripe, probably it travels and it is picked unripe like lemon is green not yellow, of course we do have many organic local which is great but also non organic local but RIPE. My question is whould you go for organic and unripe or local not label organic but always ripe.

    Megan

Hi Sam! It’s best to keep your coffee at least 30 minutes away from your green juice– but it doesn’t matter if it’s before or after. Whichever time works best for you!

I think ripe fruit is always preferable over the un-ripe versions, so if you can get a high-quality local product that isn’t necessarily organic, that’s great! The only exception I make to that (in my area, at least) is strawberries, which are sprayed with high levels of pesticides in California… so local isn’t exactly desirable in that case. If you’re going to eat the skin, like with berries and apples, organic is still best, and you can let it ripen on the counter. If you have the opportunity to talk to your local farmers, some of their produce is actually organic, but they can’t afford to get the official certification, so it’s helpful to ask! With produce like lemons or avocados, the skin does offer some protection from the pesticides, so non-organic is an option there, too.

Red Deception

Mango sushi is, by far, the best “Dessert” sushi I’ve ever tried. It is sweet and savory!

Carrie

I love adding dill and cilantro to my salads! I tried your ‘marinara roasted veggies’ last night, and loved it. I used zuchini, eggplant, and red bell pepper, then goat cheese crumbles. It tasted just like a vegetable lasagne, or eggplant parm! Even the hubby and kids loved it! My son can’t get enough of the almond butter fudge. ๐Ÿ™‚

    Megan

So glad your family is enjoying the recipes!! I could eat those pizza roasted veggies every. single. day. The almond butter fudge, too. ๐Ÿ˜‰

Imogen

Great post! I made your fudge last week (it’s so good!), but my boyfriend ate most of it before I could get to it! It’s pretty amazing that he liked something so ‘healthy!’

    Megan

I’m so glad you both enjoyed it!! I love winning over the male-audience, too. ๐Ÿ˜‰

Felicia

whenever a bottle has a straw with it, i find that i drink more. don’t know why !

laura

Ha. I love having a new water bottle. I get excited about it and drink more water too. Doesn’t matter what bottle, honestly, just new. Or a re-usable cup with a straw. Or even a recently washed mason jar will do for me! I love adding lime and stevia for limeade!

And, yes, the sushi is cut but I wouldn’t eat it either. I’m thinking puffed amaranth with peanut butter and maybe brown rice syrup to make it sticky, wrapped around chopped up dates and maybe nuts and with some raw dehydrated fruit leather for a wrapper? A bit labor intensive perhaps…

I might go for some banana soft serve for dessert tonight! Mmmm, peanut butter and cacao nibs!

    Megan

Ha, that does sound a bit labor intensive… but maybe worth it for a fun party treat! ๐Ÿ™‚

I’ll stick to banana soft serve for now, too!!

Candice

I have been wanting to try this dark chocolate with stevia so I’m glad to hear you gave it a good review! I have already tried a number of your recipes and everything has been amazing! I love the easy Asian noodle bowl, the raw bean free hummus, vegetable “fried” rice, and the tahini dressing is my new absolute fav! Tonight we are having your creamy alfredo for dinner. Tomorrow night we are trying the detox vegetable curry. Please keep sharing your creative ideas! I love that you can eat a lot for not a ton of calories and all super healthy! Thank you for the posts!

    Megan

Oooh, I love all of those. ๐Ÿ™‚ I’m glad you’re enjoying them, too!!

{lauren} the talking kitchen

I just bought some dill and was wondering what to do with it… I already made tzatziki and just recently added it to scrambled eggs – pretty good but a little bit goes a long way. Thanks for testing it out with guac for us… won’t be trying that anytime soon ๐Ÿ™‚ happy travels.

Lisa

I hope it is a successful experiment with the chocolate sushi…that sounds good.
I LOVE dill, it is one of the best herbs ever!
I’m quite excited about that stevia sweetened chocolate. That is super exciting to have as an option!

Allison

I just got one of these today!
