I think 2016 might have been a peak for “bowl meals,” but I hope it’s still cool that I’m on the bowl bandwagon– because bowl meals, like this Vegan Burrito Bowl, deserve to stick around. They’re just so convenient and satisfying!
This vegan burrito bowl with sweet potato “rice” is so easy to make. I whipped it up using my Nutri Ninja® Nutri Bowl™ DUO™— which I had the opportunity to try while working on my cookbook, No Excuses Detox. I love this machine because it fits perfectly into my new book’s budget-friendly theme. It is an affordable multi-tasker that doesn’t take up a lot of counter space, and it actually blends similarly to my Vitamix, which is seriously saying something. (You know how critical I can be of blenders, even when I receive them for free.)
What’s cool about the Nutri Ninja® Nutri Bowl™ DUO™ is that it is a personal-size blender and food processor in one compact machine. I’ve used it to make my morning smoothies, and it breaks down even my toughest ingredients like dates, chia seeds, and ice cubes into a smooth and creamy, milkshake-like consistency. This is the feature that sold me on this machine, as I’ve never found another blender at this price point that can break down my smoothies so well.
I use it most often to blend up my weekly salad dressings, because you can use the same cup that you blend in as a storage container– so you don’t have to wash out a blender container when you’re finished. Simply twist on the pour spout lid and you’re good to go! (Perfect for taking smoothies on the road, too.)
This machine also comes with a bowl attachment, so you can whip up your favorite dips, like my Zucchini Hummus, quickly chop veggies for a weeknight stir-fry, or easily create veggie rice to use in recipes like this vegan burrito bowl with sweet potato “rice”. It’s a perfect mini food processor!
I hope you’ll enjoy this Vegan Burrito Bowl, featuring sweet potato “rice” as a more nutrient-rich base. It takes less than 30 minutes to prepare, and makes a comforting winter meal that is naturally gluten-free and loaded with nutrients. For a paleo alternative, feel free to skip the beans and add in your favorite high-quality protein of choice.
Vegan Burrito Bowl with Sweet Potato "Rice" (And a Ninja Giveaway!)
Ingredients
For the bowl:
- 1 teaspoon extra virgin olive oil
- 1/2 red onion , chopped
- 1 bell pepper , chopped
- 1 clove garlic , minced
- 1 (1.5 pound) sweet potato, peeled and cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon chili powder
- 3/4 teaspoon ground cumin
- 1 1/2 cups cooked black beans , or 1 can drained and rinsed
Optional Toppings:
- Freshly chopped tomatoes
- Diced red onion
- Fresh cilantro
- Sliced avocado
Instructions
- Heat the oil in a large deep skillet or Dutch oven over medium heat. Sauté the onion, pepper, and garlic until they start to soften, about 5 minutes.
- While the veggies are cooking, process the sweet potato chunks in a food processor to create a rice-like texture. Add the riced sweet potato to the pan, along with the salt, chili powder, cumin, beans, and a splash of water to help prevent sticking. Cover the pan with a lid and let the vegetables cook until the sweet potato rice is tender, about 8 minutes.
- Adjust any seasoning to taste, then serve warm, topped with freshly chopped tomatoes, onion, cilantro, and sliced avocado as desired. Any leftovers can be stored in an airtight container in the fridge for up to 3 days.

Note: You can speed the chopping process by using the Nutri Ninja® Nutri Bowl™ DUO™ to dice the red onion, pepper, and garlic. I did this first, then processed the sweet potato rice while the veggies were sauteeing, to use my time as efficiently as possible.
Hope you enjoy the burrito bowls!

Reader Feedback: Have you tried making “rice” out of any other veggies?
I would like to “rice” everything in sight…yams, zucchinis, carrots, onions, purple sweet potatoes
What wouldn’t I use it for might be the easier question to answer. Salad dressings, smoothies, nut butters I hope. The list is endless. A busy woman’s survival tool ?
Looks delicious! I would love a ninja blender to help me with my healthy goals! Thanks for sharing.
I’d make some on-the-go superfood energy balls with lots of maca, gogi berry and everything in between 🙂
I have the first generation bullet that’s barely hanging on and the bowl to my food processor just broke. So I would love to win the nutri ninja nutrition bowl duo for my smoothies, nut butters, and granola bars.
I would like to make this recipe. I’m intrigued by the sweet potato “rice”.
I would love it for my salad dressings! And the sweet potato rice!!
Salad dressings! Dips! Hummus! The smaller container looks way easier to work with.
I am trying. to eat a better diet in order help numeral with health issues caused by Multiple Sclerosis (MS). I have every limited energy due to MS. This tool would make what seemed impossible doable.. It would be highly valuable.
It would come in handy when I make this DELICIOUS looking recipe! Also hummus and pesto would be a snap?
Sweet potato “rice”? Brilliant! I would absolutely use the awesome Ninja machine to make this recipe! Also, smoothies, salad dressings, soups, Lactation energy balls, etc. I would LOVE to own the Ninja!
This is a crazy good giveaway…smoothies and salad dressings for the win!!
I’m definitely trying this burrito bowl and I would use it to make smoothies and dressings.
I love all your recipes Meghan! I love how veg-based is your theme and everything else builds off. That’s how I have to do Paleo. I could also REALLY use a good blender!!! I stopped buying blenders whenever the last one broke and use my food processor for everything. And while my kids are used to slightly chunky smoothies they would be ecstatic about milkshake consistancy. I love to make your salad dressings and the idea of the personal blender cup/container sounds so easy! Thanks!
Your hemp seed ranch dressing and chocolate shake!
My own nut butters! plus everything I already make with my food processor 🙂
There are so many awesome things i want to do and try!! I love to cook and am always borrowing my mom’s “this and that” because I don’t have a food processor, vitamix, etc so having a little extra NINJA help in the kitchen would be amazing!!!
Definitely this recipe, but smoothies and protein shakes every day! It will be fun to come with new recipes or try yours with this cool “toy”!
Thank you Megan for the chance to win a Ninja Blender! I currently rent a room and have limited space so having this blender would be perfect for my room. I would love to make smoothies, salad dressings and the vegan burrito bowl and so many more recipes from your website!
I want to make this recipe right now! I need a ninja!!
Oh man, I would make dressings way more than I do now. It just seems like it would be so easy! I would also make sweet potato rice.
Oh how I love me some smoothies! This would be awesome to try ‘rice’ with or dressings!
Oh I would definitely use it for chopping Andy mincing veggies. And zucchini hummus as well! I can’t wait for your next cookbook!!
Oh wow! Your recipe for a vegan burrito bowl looks divine. I definitely would want to try it!
A one stop shop would be the Ninja’s delight for me. I’m a wheelchair user (I’m so not pulling that card tho lol!). I can still weight bear (just not walk) so standing still with my veges and nuts and grains around me (and not having to move around to use other equipment) making dressings, and dinners, smoothies (I’m a vegetarian) with a Ninja, would mean I am more able to be healthy under my own steam. . Cooking is the activity I miss the most so this would be such a help to to empower me to be more independent – making my own healthy food in a one-stop-shop kinda way! Your recipes Megan are within my capabilities and I can’t tell you how much I love that. Loving your recipes, and blog and the Facebook group for even more inspiration Megan. Thanks so very much.
Would love to have this in my kitchen!
Right now, I am loving riced cauliflower in so many different ways. I would love to be able to make my own, as well as my favorite white bean hummus. BTW…I have just recently signed up to receive your posts and am thoroughly delighted with each recipe that I have tried. Thank you for your commitment to healthy eating and the time you dedicate to testing recipes.
I love making smoothies but my blender is that good, so definitely smoothies. Also would love to try sweet potato rice!
I’d make soup and cauliflower rice!
I recently had to go vegan for health reasons and this ninja would really help make it easier to cook yummy things from your recipe books!!
I love making morning smoothies!
I love all things smoothies lately – especially for dinner since I’m in my 3rd trimester and they are healthy and easy to digest before bed! I would also love to make different veggie “rice” with it – yum!!
Protein shakes for days with this thing!
Your burrito bowl as a starter. Cauli rice with cilantro and lime. Fruit smoothies with avocado and coconut milk.
I would definitely make this recipe since I had never even heard of sweet potato rice before. Would love to be able to make wonderful smoothies as well along with some delicious creamy soups.
What a great giveaway! I need a new blender so badly and I am excited to try more of your recipes!
I would really love to try making an apple pie smoothie!
My baby just got the go ahead to start puréed fruits and veggies. I’d like to make my own instead of buying so the ninja would be perfect!
This looks and sounds absolutely brilliant! I have been looking for a new substitute for my stick blender set + accessoires. It has been coming to an end for at least a year now, and even though it is still relatively decent at keeping up with me – I’m gonna need a new alternative soon. Ideally I would like to use a new alternative for my cooking and then use the old set for DIY cosmetics like whipped body cream etc. For as long as the old one would work that is 🙂
Your recipe sounds delish, obviously I woud be making that one first! 😉 Minus the bell peper for me, but I really love the idea and it seems a quick and easy one. That’s what I like about your style of cooking, the ”lazy cook” style – as I believe you have called yourself in the past. At least I know I am one! But without compromising on the results, of course!
I would also use the Ninja for small(er) batches of anything like dressings, snacks, food for kids, toppings for my fruit crumbles, marzipan, pestos, to quickly chop/rice veggies… I think it would be perfect because it would mean less dishes/a smaller device to wash up. Especially nice for me as I’m dealing with health challenges, but stll wanting to make proper and healthy homemade food!
I love to rice vegetables but I currently only have a small food processor. What a message it makes. This would make it so much easier! I also can’t wait to try the sweet potato rice!
i would make seasoned parsnip leek patties. its one of my favorites thing to make.
I’d love to try the recipe above. Then maybe some falafel wraps from Everyday Detox…and of course the famous chocolate superfood shake along with other smoothies! ?
I would definitely make rice out of everything… broccoli, cauliflower, and I’m dying to try sweet potato rice! Not to mention how convenient it would be to have the veggies practically chop themselves. Awesome!
I’d love it to try this sweet potato rice recipe! Looks good!
I’d love to try this sweet potato rice recipe! Looks good!
This sounds so yummmy. I have your other detox book and I love it !!!!
The better question is probably “what wouldn’t I make with the Ninja!” I want to incorporate more green smoothies into my diet, and I also want to start making my own salad dressings. And I love soup, so I know I’d use it for that!
I’d love to
Use this to make my cauliflower pizza!!! And I’m excited to try many other things,
What wouldn’t I make? Since my obsession with your first cookbook I find myself blending all the things. Rice, dressings, ummm roasted veggies into burger patties and loafs! Delish
I love the idea of using this to make salad dressing! I hate having to use my big vitamix to make a little bit of dressing and then having to wash it. Small and same container sounds perfect.
