What I Ate Wednesday

For some reason, weeks following a holiday always fly by for me. I can’t believe we’re already half-way through!

It’s been a busy one, too.

The kind of week that calls for coffee.

So long, Lent!


bowl of goat milk yogurt with cinnamon sprinkled on topWhen I don’t have time to go through the juicing/cleaning process, a cup of plain goat milk yogurt topped with cinnamon works in a pinch.

I missed my juice, though!

A large mixed green salad, topped with sliced cucumbers and tomatoes, dressed with a generous portion of vegan “cheese” sauce <– leftover from our Easter potluck.

Plus, more sliced cucumbers dipped into more cheese sauce. This stuff is good. (and, of course, I’ll share the recipe soon!)

After all that vegan “cheese” at lunch, it was time for real cheese at dinner. ๐Ÿ™‚

Mixed green salad, topped with steamed beets, diced zucchini, soft goat cheese and lemon juice.

Followed by a dish of spiralized zucchini noodles, sauteed with mushrooms in a creamy cauliflower & goat cheese sauce. I’m really excited to enjoy these leftovers tomorrow, too!

I like to steep two bags in a half cup of boiling water, for a concentrated flavor, then fill up the rest of the mug with warm almond milk for a “chai latte” flavor.

So. Good.

I’ve been missing my green juice too! I’ve made a few batches in the Vitamix but have to use the nylon-squeezing method to separate the pulp from the juice, so it takes a while. Might have to put the time in this weekend though because they taste oh so good!


    I’ve only made juice in my Vitamix once– I was so sad when it stained my almond milk bag! Using nylons is a much better idea. ๐Ÿ˜‰

I’ve been on a craving for steamed zucchini lately after a huge raw kick. That and miso soup. Wierd haha.

I made some little raw lemon cheesecake tartlets over the Eastover weekend and I’m still enjoying them! Also mocha coconut puddings. Though now I don’t know WHAT to eat because my vitamix just broke. What in the world did I do before my Vitamix???

Hey, did the company ever respond re: stevia in the tea? I still use stevia, but just curious…


    Oh no!! I don’t know what I’d do without my Vitamix, either! I hope you get it fixed soon!!

    The company hasn’t responded about the stevia yet… though, I’m hoping they still will. (I actually emailed them AGAIN!) I’m assuming there isn’t stevia in the tea, since stevia is commonly listed in other ingredient labels, and is an ingredient I would think most companies would be proud to disclose. I’m guessing the other “natural ingredients” are more like bugs or dust that may sneak in during the manufacturing process… ha ha.


      BUGS? I hope not! I love that tea but I’m not into the new trend of bugs as protein. ๐Ÿ™‚


      Maybe under the “natural ingredients” there is licorice root? Licorice root is another natural sweetener. I have some “Throat Coat” tea by Traditional Medicinals. It is very sweet but has no sugar or stevia but it does have licorice root.

Wow, talk about food wealth. I’m coming to YOUR house for lunch. This looks really great. I’ve lost my raw goat milk supplier, and won’t use cows milk (unless I want to get sick as HOLYWOW) and can’t bring myself to buy the pasteurized goats milk from the shops. I guess I could make yoghurt with nut milk, but that’s going to get really expensive really fast..


    I prefer homemade yogurt, too! I was making my own raw coconut and almond yogurt for a while, but it does get expensive, and can be rather time-consuming. I resort to store-bought goat yogurt when it’s on sale, so I can be lazy. ๐Ÿ˜‰


Such wonderful eats! I am eating green juice for breakfast,salad for lunch, salad or soup for dinner, and the last two nights, I have detoured from the cleanse and had a lil treat with my sis since I am home visiting…gotta let go sometimes! ๐Ÿ™‚


How come you’re not hungry when eating so little? On a quick glance this doesn’t even come to 1000 kcal … I mean, tea for dessert???


    Admittedly, this was a lighter day for me than usual, but my day still comes to well over 1500 calories. The almond butter, coconut oil, tahini and full-fat goat dairy products are all calorically dense, and very satiating. When eating such nutrient rich foods, I’m never left feeling hungry! Of course, if I had my normal dark chocolate bar for dessert, my day would have had an additional 400+ calories, but I’m trying to not need chocolate every. single. day. Hence, the tea latte. (which is actually very sweet and delicious!)


I’ve ditched the morning green juice for coffee in my little french press lately…it tastes delicious, it’s warm, comforting and satisfying, it requires no crazy cleaning of giant machines and it gets things moving, digestively speaking. Win!


    Coffee wins out many mornings for me, too. Especially when it’s chilly outside! ๐Ÿ˜‰


Everything looks amazing! I recently discovered your site and have tried many of your recipes (love the detox macaroons!) Could you please post the cauliflower goat cheese sauce that you put on the zucchini? That sounds so good!


    I’m still tweaking that recipe– I think it could be better. But, I’ll definitely post it after I try making it again!
