What I Ate Wednesday

How is it already Wednesday?! This week is flying by.

Morning

Despite the fact that I wake up at 6am for work each day, I try to hold-off on drinking coffee until at least 8am–> which ensures I drink plenty of water first, and hopefully allows my probiotics time to kick-in before drowning them in caffeine.

Lunch

carrots and lettuce leaves on a plate with goat ranch dressing in a cup and a plate of scrambled eggs with spinach leavesI’ve been really “snack-y” around lunch time lately, so I’ve been enjoying lots of raw veggies– baby carrots, red bell pepper slices and a romaine heart– with yogurt ranch dressing.

Followed later by a couple organic eggs scrambled with fresh spinach.

Dinner

salad in a bowlLarge romaine salad, topped with wild smoked salmon, chopped peppers, steamed beets and fresh dill, dressed with lemon juice and Dijon mustard.

Dessert

chocolate pieces in a bowlDark Chocolate!!! I devoured half of a Green & Black’s 85% bar. ๐Ÿ™‚

Mmmm smoked salmon makes my heart sing! ๐Ÿ™‚ Sadly I’m not eating much of it this week (because it’s so flippin expensive) but at the moment I’m sipping on a lovely green smoothie and devouring a bowl of watermelon. I feel a watermelon baby growing inside my stomach but it’s just oh-so-good!

Yum! Wow, I have been eating everything I feel like..green drinks…experiementing with zucchini brownies so plenty of those…protein packed thin mint raw cookies, salads and wraps galore…even a few bites of chocolate chip cookies here and there-I made some for my niece when she was visiting and Travis really liked them so I have been making a couple here and there…today I am going to focus on green drinks and smoothies to kind of reset…I am excited!

    I’ve been sampling one too many chocolate chip cookies myself this week, so I think some green juice is in order for me, too! As usual, everything sounds delicious. ๐Ÿ˜‰

I have been craving smoked salmon lately and was planning on having some for dinner tonight myself! Where do you get yours? I’m back on the road again, but sticking to green juices, fuji apples, avocados, Whole Foods salads, steamed/baked veggies, and dark chocolate. Yesterday I splurged a little and had some amazing raw treats I found at a local juice bar-so good! And today I think a pre-dinner green smoothie is in order while shopping for raw goat cheeses ๐Ÿ™‚ Thanks for sharing! Oh and I LOVE dill.

I’ve been taking your cue for breakfast and having coffee with a bowl of berries everyday…today was raspberries, so perfect thanks for the idea…I feel so nice and light in the morning, it’s awesome!

Many massive salads with steamed broccoli, cukes, avocado, brussels sprouts, goat cheddar, manchego, or fish, and I’ve been obsessed with goat yogurt this week. I’ve been having it on the sweet side, either with gobs of raw honey mixed in, with a dark chocolate bar on the side, mixed with raw cacao nibs or mixed with TJ chocolate chips. Haven’t been eating alot of grains or bread lately so I guess I make up for it with honey and chocolate…win!

Funny, I have that nut milk bag but must not have read the recipe, and followed my own. Coconut oil it is! I’m trying it tomorrow.

Today featured a green juice, a banana smoothie, strawberries, an arugula salad, straight out of the garden, plus eggs with truffle salt. Not too shabby! There will be dessert though…obviously. ๐Ÿ™‚

    Truffle salt?! That sounds amazing!! I always add a sprinkle of Himalayan salt to my eggs– so good. ๐Ÿ™‚

your eats have been similar to ours lately, and we do the same thing in the morning, take our probiotic and then drink lots of water before our coffee ๐Ÿ™‚
tonight we are thinking salad with avocado ๐Ÿ™‚

Wow, I don’t know how you make it until lunch with nothing but strawberries and coffee!

I add a little bit of silk very vanilla to my coffee. It is not that good for you, but a little goes a long way and it hits the spot!

I wish I were a salmon fan.. that salad looks great!
