What I Ate Wednesday

Hello from the Midwest! I took our little guy on his first flight this weekend, and I’m happy to report that we both survived. Hauling a baby through an airport by yourself is quite a workout!

We’re staying with my parents this week, so here’s a peek at what we eat at their house. You may think that my mom spoils me with homemade meals while I’m here, but it’s usually the other way around– I end up making her many of my favorite meals, instead! So, don’t be surprised if these eats look pretty familiar.

Morning

green smoothie in a glass with a strawI started the day off with a green (murky-looking) smoothie. It included water, baby spinach, avocado, frozen cherries, dates, and vanilla.

Lunch

I made a big batch of salad dressing this weekend to keep in my parents’ fridge, so salads are easy around here during the week. This one included an entire romaine heart, steamed beets (from Trader Joe’s), herbed goat cheese, and my favorite apple cider vinaigrette. It’s rare that I get to eat while my baby is sleeping, so I really enjoyed sitting down and savoring my meal!

My salad was followed by a couple of pasture-raised fried eggs… but the baby woke up while they were cooking, so they got a little over-done. Whoops. Still good, though.

Late Afternoon

I found myself a little hungry while we were out at the mall after work, so I tided myself over with this rare treat– a decaf almond milk iced latte. I was happy to see that Nordstrom’s coffee bar carries unsweetened almond milk!

Dinner

On our way home from the mall, I was starving and too tired to make anything myself. So, we stopped by Whole Foods and picked up these prepared “Veggie Salad Wraps.” They were amazing, especially with the peanut dipping sauce! However, I should have gotten two containers for myself– one didn’t cut it.

So, I snacked on several slices of raw goat cheddar, and my favorite mint dark chocolate for dessert.

This post just reminded me how long it has been since I have had any goat cheese. I really miss it!! My eats have been pretty standard as well….. oats/eggs, salads, lots of watermelon, and green smoothies!

I like the idea of making a big salad to enjoy all week long. I made a big batch of soup (with leeks, cauliflower, broccoli) which I’ve been having for dinner all week, along with some roast veggies (carrots, turnips, green beans) and tofu. It’s been easy and delicious pulling dinner together :).

I didn’t know Nordstrom serves almond milk! That’s awesome! Those salad wraps also look delicious!

Hi Megan,

Quick question. During your pregnancy, did you still consume raw cheeses? I know that tends to be a no-no due to listeria concerns and was wondering where you fell on the issue. Thanks!

I’m in Ohio and I feel with the warmer weather coming around, it brings out a desire for me to eat better. I’ve been eating more veggies and less gluten because I’m shying away from bread, which is great! I feel lighter and better already!

Hi I am from Mauritius…I love ur blog.But don’t u eat carbohydrate at all?I find it tough to diet.i got a very sweet tooth. I have 15 kg to drop.I want to eat healthy.Please help

    I do eat carbohydrates in the form of fruit, vegetables and dark chocolate! I’m not the biggest fan of grains, but I eat them on occasion, too. There’s no need to dive into a diet all at once, just make small changes like adding fresh fruits or veggies to your day. The more you eat them, the more you might start to crave them!
