What I Ate Wednesday

These posts should really be called “What I Ate Tuesday,” but I prefer the alliteration that Wednesday brings to the title. Here’s a peek at what I ate yesterday, while working from home and caring for that cute little guy you may spot in the background.

Our son doesn’t mind the noisy blender when he’s awake, so I whipped up a smoothie using the fresh fruit we had on hand. (He sits in this chair that attaches to our kitchen counter, so I can talk to him about the fruits and veggies as I prepare our meals.)

This particular smoothie included a quarter of a pineapple and a couple handfuls of fresh blueberries, along with a chopped cucumber, half an avocado, and a handful of fresh parsley. It wasn’t the best smoothie (too much avocado!), but it was a quick and convenient way to get some nutrients into my busy morning.

I’ve been having two mini-meals in the afternoon, starting with a mixed green salad topped with soft goat cheese, steamed beets (from Trader Joe’s), chopped cherry tomatoes, and Honey Dijon dressing.

A little while later, I whipped up this Chocolate Banana Protein Smoothie.

For a little afternoon pick-me-up I sipped on a cold pressed green juice made of cucumber, kale, celery, broccoli, green apple, lemon, and ginger. I also ended up snacking on two of the cookies pictured above while shooting them for an upcoming recipe post. (They’re so good!!)

Up until recently, my husband had never tried salmon– but now that he has, he’s hooked! He requested salmon and roasted asparagus for dinner last night, so that’s what we had. I served mine over a leafy green salad smothered in more Honey Dijon dressing. I love the hearty combination of warm toppings over mixed greens.

And not surprisingly, I had a mug of decaf green tea and mint dark chocolate for dessert.

I am hooked on Cauliflower “potato salad” and Zucchini fries (Zucchini tossed in olive oil and parmesean cheese and baked unitl crispy.)


This week I’m really into mashed black beans and guacamole – a little Mexican theme this week!


This is too funny. I just got done making your honey Dijon dressing for salmon and salads tonight. We are gonna add some sautéed portobello and zucchini on top. Also I think my son had that same outfit. It’s adorable by I can never figure out how to snap it properly!

Well, we’re eating lots of zucchini, tomatoes, eggplant and whatever is growing in the garden or cheap at Farmer’s Markets and Roadside Stands. Enjoying cherries and blueberries that are finally growing here, yay! Will be making healthy smoothies for the kids and throwing in some Kale and Spinach, hey, what the kids don’t know doesn’t hurt them! They cluelessly gulp down their uber-healthy veggies. Capri Sun? Huggies Drinks? Ewww.

I have been started having two mini lunch time meals too – maybe its the summer sun and have managed to create a few average smoothie myself. I have mainly been eating raw carrot cake slices as i have been shooting them for a post and its just so tempting…


Hi Megan, What decaf green tea do you recommend? What are the benefits when its decaf? Would you use during pregnancy?


Quinoa sushi has been my go-to lately…nori with cold cooked quinoa, cucumber, avocado, sprouts, a little bit of Dijon mustard & salt/pepper…yum! 🙂


Where do you but your cheeses? Or what brands do you prefer? I live in Los Angeles right now, and would love some recommendations if you have any!


Last night we had a large salad with chopped romaine, sliced brussel sprouts, green and purple cabbage, cucumbers, pumpkin seeds, and fresh corn. We also had a side of cooked lentils topped with olive oil and sea salt. It was super yummy, and even my boys loved it!


Love, love, love this meal line up. Each and every one is a winner in my book. Thank you so much for doing what you do. I’m a retired gal with a husband that loves Pescetarian meals (vegetarian who eats fish occasionally). Please keep up the great work – it is so needed.

I am curious of your ratio for the juice you made. I have most ingredients on hand, and recently started juicing, so I love finding new combinations. My favorite that I made today was 1 small orange beet, 2 oranges, and 1 pear. It wasn’t very veg friendly, but it sure was refreshing!
