What I Ate Wednesday

The past few weeks have felt like a bit of a whirlwind, but things are finally getting back to normal over here. We spent our long Labor Day weekend visiting Washington state with some friends, celebrating our little guy’s first birthday. We both enjoyed our very first ferry ride to Seattle! mom and son on a seattle ferry

Of course, we were welcomed back to reality when our apartment’s central air conditioning broke this morning… for the fourth time this summer. We’re cursed!

It’s a good thing it’s only going to be 100-degrees this weekend. Yikes! I see lots of cooling foods in our immediate future, but for now, I’ll share what we had yesterday, before our home became a sauna.

Morning

I made a big batch of Pumpkin Seed Granola this past weekend, for an easy breakfast option, but I forgot how addicting it is. I’ve had it every single morning this week!

Lunch

I started my lunch off with a romaine salad topped with cherry tomatoes, artichoke hearts, goat cheese, and homemade honey dijon dressing. That was followed up with 2 eggs scrambled with spinach.

Snack

I haven’t had the motivation to make juice in the morning like I used to, so it’s become a nice mid-afternoon snack lately. This one included cucumber, collard greens, green apple, lemon, and ginger.

Dinner

Austin and I each had our own roasted sweet potato, topped with sauteed veggies and sliced avocado.

To finish off the night, we had Chocolate Peanut Butter Milkshakes. They are our favorite summer treat!

Oh that granola look tasty! I need to make me some! I have been munching on lots of cooked onions and sweet potato and some grain free red velvet cakes I am in the the process of perfecting – yum but not quite there yet – coconut flour can be a tricky beast:)

As always, your food choices inspire me to try harder to make better food choices. My mom keeps telling me “Laura, you are what you eat so eat GOOD, Healthy food! And that disease and sickness isn’t something that just happens to people overnight…..it’s a lifetime of bad decisions. More healthy smoothies for me.

Love that sweet potato, avocado, veggie dinner dish– will have to try my own spin on that!

i need to try this pumpkin granola.. can i omit the chia seeds(alergy)?

    Yes, I think it would still work well without the chia seeds.

Did you wait a long time between having the sweet potato for dinner and the milkshake for dessert? I’m wondering about the combining of starch and banana.

    We had the shakes about 2 hours after dinner, which isn’t technically enough time after the sweet potato dinner for food combining purposes.

Thank you for sharing! I’ve got to make that pumpkin seed granola! – I’ve had it bookmarked & am glad to be reminded to get to it! Sweet potato stuffed with tons of veggies is one of my favorite meals! I’ve always sauteed the veggies & am now excited to try topping my sweets with roasted ones!
