I stayed out a little too late on New Year’s Eve.
As a result, I woke up at noon on New Year’s Day.
It’s rare that I get to sleep in, so I was happy to take advantage of my day off! So, not surprisingly, my first meal of the day was “brunch.” On holidays, I tend to relax my food combining rules at bit, so you’ll notice that my meals yesterday weren’t perfectly combined. But, they were all delicious!
Paleo Pancakes. I used sunflower seed butter and cinnamon in this batch, and it was amazingly good. The banana was so sweet and ripe, I didn’t even need syrup!
The funny thing about baking with sunflower seed butter is that is has a strange reaction to baking soda– it turns the batter green! You can’t tell from this picture, but the inside of my pancakes were dark green. Probably too creepy to serve to company!

We met up with some friends for dinner, at one of the only restaurants open on New Year’s day! I snacked on some sweet potato fries as an appetizer, then ordered this large Pear, Feta & Kale salad for my entree.
For dessert, I had a scoop of real vanilla ice cream. Yum.
