The next time you have a bruised or imperfect apple, turn it into this delicious apple smoothie! It has a creamy, slushy texture and tastes like Fall in a cup. Every time I make it, I wish I had doubled the recipe, because my kids want to share.
In a high-speed blender, combine the apple, banana, flax, peanut butter, cinnamon, and milk. Blend until smooth, stopping to scrape down the blender as needed. The apple should become liquified, which will add more "liquid" to the mix, but if you need to add extra liquid, you can start by adding 2 tablespoons at a time.
Once the mixture is totally smooth, add in the ice and blend again until a slushy texture is achieved. Serve right away for the best texture and flavor. (Don't add too much extra ice, or it could dilute the flavor.)

Notes
Nutrition information is for the whole batch using unsweetened soy milk, and is just an estimate, not a guarantee.Banana Alternative: I don't think you can taste the banana much in this smoothie, but you can swap it for two pitted Medjool dates if you prefer. In that case, you may need to blend longer to ensure they are pulverized.
