I spent weeks figuring out the best ingredient ratio so it tastes good while still sneaking in some ingredients you might not otherwise consume—like celery, fresh cilantro, and ginger. In a high-speed blender, combine the water (or orange juice), green apple chunks, pineapple, banana, ginger, spinach, celery, cilantro, chia seeds, and fresh lemon juice. Secure the lid and blend until smooth, about 60 seconds. Stop and scrape down the sides of the blender, if needed.
If you don't have a high-speed blender, blend the orange juice, chia seeds, spinach, cilantro, and ginger first to help break them down completely. Then add in the fruit and lime juice, and blend again.
Taste the smoothie, and if you want a slushier texture, add a small handful of ice cubes. Secure the lid and blend again. (This is optional; don't add too much ice or the flavor will be diluted.) Pour the smoothie into a glass and enjoy it right away.
