Did you know you can cook two dishes at the SAME TIME in your pressure cooker? These recipes are written with clear directions to help walk you through the process step-by-step. That means you can cook a chicken & vegetable stir fry, along with a side of rice for serving it, all at the same time! Or, you can make the filling for Shepherd’s Pie, plus the mashed potato topping, all in the same pot. It saves time & clean-up!

You can also make a 2-layer cake, with a healthy frosting to go with it (all at the same time!), granola bars, filling salads and bowls (don’t miss the Cheeseburger Salad or Korean Chicken Bowls), brownies, and more. Whether you are a vegetarian or omnivore, there’s something here for everyone.

Frequently Asked Questions

Do I have to own an Instant Pot to use this cookbook?

The recipes in this cookbook are designed for an electric pressure cooker, but it does not have to be Instant Pot brand. There are no specialty settings involved!

If you do not have a pressure cooker at all, you’ll still be able to enjoy many of the recipes (especially the salads & dressings) but oven and stove top methods are NOT included in this book, so you’ll have to experiment with cooking times on your own.

Are all of the recipes gluten-free?

There are gluten-free options included for every single recipe in this cookbook, but there are a few recipes that do call for gluten containing grains, including whole wheat flour, farro, and barley.

Be sure to look for the “Make It Gluten-Free” note at the bottom of these recipes, if you need to.

Does this book include vegetarian or vegan recipes?

This is not a 100% vegetarian cookbook. Out of the 75 recipes included, 16 of them do call for meat or fish. (Most of these are found in the Protein-Packed Favorites chapter.)

With that being said, there is a tested vegan alternative for every single recipe in this book, so you can still enjoy those recipes if you don’t consume meat or dairy.

What Readers Are Saying

I wasn’t someone that wanted to jump on the Instant Pot bandwagon, but when I heard that The Detoxinista was coming out with an IP cookbook, I decided to invest in one. These recipes are so easy to follow. She is very detailed and even helps you learn how to use your pressure cooker. I love that she gives many different options to the recipes, if you’re glutten-free, Vegetarian, Vegan, or a Meat Eater, there is something for everyone and explanations for substitutions! This is important for me because I have been making more Vegetarian and Vegan meals, but I like that on those days I only want to cook one meal for my whole family to enjoy, I can easily make them something Clean and Healthy.

I’ve cooked three recipes from this cookbook so far, and my family is VERY happy. The broccoli soup tasted fresh and clean. The red beans and rice was spicy and flavorful while being extremely simple to make. The double chocolate brownies were fudgy and rich – and gone within 12 hours. More about my personal experience with Megan’s other books and her eating strategies …
Over the past few years, I’ve changed the way I cook (and eat) to align more with the strategies Megan promotes. On most weeks, I cook 4-5 recipes from Megan’s cookbooks or from her website. Her food is delicious, easy to prepare, and satisfies my family of crazy eaters (which includes a vegetarian, a vegan, several meat eaters, & one who is low-dairy / low-gluten). From a health perspective, my cholesterol has dropped (without medication) so significantly that my doctor was incredulous and wanted to know how I’ve changed my lifestyle. I’ve lost almost 30 pounds (without really trying). And I have more energy and sleep better than I have in over a decade. I never believed (before now) that how I feel is so closely tied to how I eat, but I get it now. And to be clear, I’ve made only simple and definitely not drastic changes to my diet. I still eat a cheeseburger every once in a while, and I love my desserts. What Megan’s recipes and guidance have helped me do is move more towards a diet that makes me feel the best I can feel.

I ordered my Instant Pot specifically for The Fresh & Healthy Instant Pot Cookbook. I am obsessed! It’s really changed my life by saving so much time. I can’t believe how many easy one pot recipes there are. One thing that I love is that there are so many variations of the recipes. My husband likes meals with meat occasionally, but for each meal there is a vegan substitute option, which I make most of the time. Everything I’ve made so far has been unbelievably good, such as the creamy navy beans & rice, wild rice & mushroom stew, easy taco salad, orange chicken, and chicken tikka masala. There are still so many recipes I’m looking forward to trying, including the chocolate cake and frosting- I can’t believe it all cooks at the same time! This is the third cookbook I have by Megan Gilmore and I’m blown away at her creative ability to make healthy recipes taste out of this world amazing!

We have two other Detoxinista cookbooks and to say we love them is an understatement. They have my devoted meat-a-tarian husband willingly and gleefully eating vegan food. It’s not a cookbook, it’s a book of miracle spells. We bought an InstantPot last year and weren’t sure what to with it beyond using it as a rice cooker. We’ve just had another baby, so prepping, planning, and efficiency around food is key, so getting this book was a no-brainer. I made the Sweet Potato Curry last night and it was, as promised SUPER fast and so tasty. I cannot recommend highly enough!
