What I Ate Wednesday

Wow, I’m so glad to hear that you guys are as excited about the cookbook as I am! Thanks so much for your suggestions and support. I don’t have the official release date to share yet, but I will be sure to let you know as soon as I do.

In the meantime, I’ve been working on recipes like a madwoman! I’m getting ready to work with a test group that will be sampling a possible meal plan to be featured in the book, so things are extra-busy while I finish developing recipes for that particular section. Considering that I’m preparing most of these meals with a baby attached to my chest (thank goodness for the Ergo!), I’m hoping this situation will translate to recipes that are easy for everyone else to prepare, too!

Taste-testing recipes has thrown my days and meals for a loop, but the following is an example of what they’ve been looking like lately.

Morning

It seems that everyone around me is getting sick, so I’ve been making sure to drink plenty of green juice each morning to boost my vitamin intake. My favorite combo is a mix of romaine, kale, celery, carrots, lemon and ginger. When I feel hungry later in the day, I have individual servings of chia pudding ready to go in the fridge!

Lunch

I like to make a big batch of one or two dressings over the weekend, to make my daily salads quick and easy to prepare. This week, I made my green goddess dressing, which I could eat straight with a spoon– but instead, I ate it over mixed greens with steamed beets. After my salad, I treated myself to a slice of raw cheesecake.

Dinner

When my workday is over, I get busy recipe testing. By the time I’ve sampled various dishes, I’m not necessarily in the mood for a traditional dinner, but I try to make sure I eat some salad along with whatever else I’m sampling– which ensures my dinner doesn’t end up being an assortment of grain-free desserts!

On this particular night, I had made seven trial batches of dressing to get it “just right,” so eating salad was definitely called for! I followed that with a slice of leftover frittata– which I ate standing, as if it were a slice of pizza. Sitting down for dinner seems to be a thing of the past, at least until our little guy can sit up on his own and join us at the dinner table.

  • I made a beautiful breakfast this morning. Sauteed kale with coconut oil, a splash of sesame oil, garlic, and coconut aminos. Topped it with two pasture-raised eggs cooked in pasture butter and sprinkled with turmeric. Fair trade organic coffee with pastured cream. I plan to make some crock pot meals this week. Do you have any ideas?

    I totally understand how rough meal time is with kids..i have a 4 year old and 10 month old and i dread meal time! The older is soooo incredibly picky and it takes over an hour for her to eat and my son tries to knock everything off the table. i wish i could say it gets easier but i’m not there yet! on a different note, i can’t wait to try the green goddess dressing. I’ve tried the store brand and I probably would have liked it had i not known what was in it!!!

Everyone around me is getting sick to so its green smoothie and fresh juice central! I’ve also been taking fermented cod liver oil and it been keeping me sickness free. Have you ever used FCLO and what are you thoughts on it?

    We tried your blonde macaroons for dessert this week! I made my first batch a few days ago, my hubbie and I love them! They’re delicious and the homemade coconut butter is a revelation, thanks for sharing the recipe with us :)

    lots of salad … coconut oil roasted veggies, boiled egg, baby spinach and mashed avocado with chilli and chives.
