I’m always looking for a fun way to spice up my salads, so I attempted a “mock” Caesar dressing today, using creamy avocado as the base! Unlike other raw Caesar dressings, which use nuts or seeds as a base, this dressing is incredibly easy on the digestive system and is just as delicious! You don’t even need to add any extra-oil, thanks to all the heart-healthy fats in the avocado.
Raw, Vegan Mock Caesar Dressing
Makes about 1 cup
1 ripe avocado
1/4 cup water
4-5 cloves of garlic, minced
1 Tablespoon dijon mustard
2 Tablespoons nutritional yeast
1 Tablespoon raw apple cider vinegar (I prefer Bragg’s brand)
juice of half a lemon
1/4 teaspoon sea salt
black pepper, to taste
Throw all the ingredients in a blender, and blend until smooth and creamy. Adjust seasonings to taste, if necessary.
For your Caesar salad, simply chop up a head of Romaine and toss it generously with dressing:
Garnish with an extra dash of nutritional yeast, and enjoy!
