Did you know you can make green eggs without artificial food coloring? It’s a super-easy way to sneak some green veggies into your day, without much extra effort.

I originally set out to make green eggs when my kids were younger, and we were reading the Dr. Seuss book, Green Eggs and Ham. My kids thought they looked fun, and best of all, they didn’t seem to mind that I had added a big handful of spinach to their breakfast.

Something I didn’t expect to happen… is that I actually love these, too. I’m not the biggest fan of spinach wilted into scrambled eggs (it’s a texture thing for me), but these? They have zero slimy texture, and I still get extra greens into my morning. It’s a win-win!

Why You’ll Love Green Scrambled Eggs

It’s fun for kids. This is the perfect recipe if you’re reading the Dr. Suess book or want a healthy green breakfast idea for St. Patrick’s Day!

It’s easy. Just toss eggs, spinach, and a little salt into a blender, and blend until smooth. Then you’ll cook it just like regular scrambled eggs, only with a green hue. 

It actually tastes great. Spinach is the ultimate chameleon of veggies. You can hardly taste it in a green smoothie, and these green eggs are no different! The spinach flavor is almost unnoticeable, especially if you add any extras, like a sprinkle of feta cheese or some green salsa on top. (Trader Joe’s green salsa is my favorite.)

It’s sort of sneaky. Instead of stirring spinach into scrambled eggs, which might not go over well with children or adults, you’re getting veggies and protein in each bite. No food dye required! 

Green Eggs Recipe Ingredients

  • Eggs. I recommend starting with at least 4 eggs if you’re using a standard-size blender. (But you can use more if you are feeding several people.) If you have a personal-size blender, you might be able to start with just 2 to 3 eggs.
  • Spinach. I’ve only tested this with fresh baby spinach, which easily blends into eggs. I imagine frozen spinach might be more difficult to work with, so I haven’t tried that yet. Don’t use other greens, like kale, or the flavor will be more noticeable.
  • Salt. These will taste pretty bland if you don’t add a hefty pinch of salt!

You’ll also need a little oil or cooking spray to scramble these in a skillet. I use avocado oil cooking spray, but whatever you love will work.

How to Make Green Eggs with Spinach

Step 1:

In a high-speed blender, combine the eggs, fresh baby spinach, and salt. Secure the lid on your blender, and blend until very smooth, with no visible green specks.

Stop and scrape down the sides of the blender with a rubber spatula to ensure everything is evenly mixed.

Note: Four eggs are the minimum I can use and get smooth results in my full-size blender. If you have a smaller blender, you can likely make a smaller batch.

Step 2:

Heat a drizzle of olive oil or a pat of butter in a skillet over medium-high heat, then pour the egg mixture into the center of the pan. Let the eggs cook undisturbed for almost a minute, then drag a rubber spatula through the eggs to help them move around the pan.

Continue to pause, then move the eggs around the skillet, until they reach your desired texture. For soft scrambled eggs, lower the heat and be patient.

Serving Tips

Serve the green eggs warm right away, with any toppings you like, such as a sprinkle of Parmesan cheese, fresh parsley, or other herbs you love. Serve some sliced Canadian bacon on the side, if you’re going for a “green eggs and ham” dish. 

(But don’t ask me how to make green ham… that sounds trickier!)

Green Eggs Recipe FAQs

Can I make green egg bites instead?

Yes, if you want an egg bite that you can take on the go (or reheat for a fast breakfast), try my copycat Egg Bites instead. You can blend the spinach in with the rest of the ingredients to make a green version, then bake them in the oven.

How do I make this a full meal?

For a grown-up version, add in some cooked black beans, sauteed peppers and onions, and serve it with salsa on top. It’s a great way to get more veggies into your day, and it will leave you feeling full and satisfied for hours.

Can I make these with egg whites?

Yes, if you want to skip the egg yolks, you can use egg whites in this scramble instead. Typically, 2 egg whites will replace 1 egg in a recipe.

What do green eggs taste like?

If you use only a small handful of spinach in this recipe, you won’t taste the greens very much! The more spinach you use, the darker green the eggs will be, and the more flavor will come through. You can add some shredded cheese if you think that will make it more appealing to kids.

Ingredients
  

  • 4 large eggs
  • 1 cup fresh baby spinach
  • ¼ teaspoon fine sea salt
  • butter or olive oil , for cooking

Instructions

  • Add the eggs, spinach, and salt to a high speed blender, and blend until the mixture looks totally smooth, with no visible chunks of spinach. This should take about 60 seconds.
  • Heat the butter or olive oil in a skillet over medium heat, then pour the green egg mixture into the pan. Let the eggs sit in the pan for a few seconds, then drag a spatula through the eggs to move them around the pan, from side to side.
  • Continue moving the eggs around the pan with the spatula often, to prevent the eggs from drying out. They should be cooked through in about 3 minutes or so.
  • Transfer the scrambled eggs to a serving plate and serve warm right away with your favorite sides.
