There aren’t too many times I’ve needed to use simple syrup in my life, but recently, my son decided to start making honey-sweetened lemonade on his own. If you’ve ever tried to dissolve honey into a cold drink, you know how frustrating it can be… so that’s when this honey simple syrup can come in handy.
Unlike traditional simple syrup, which involves boiling white sugar and water on the stove, making simple syrup from honey is much faster.
It takes about 60 seconds to stir together and can be used anytime you need an easy liquid sweetener. Use it to sweeten cold drinks, overnight oats, or in your favorite cocktail (or mocktail).

Honey Simple Syrup Ingredients
- Honey. The type of honey you use will slightly affect the flavor, but any variety will work for this recipe. Clover honey is one of the most common options, and it has a stronger “honey flavor” than mesquite honey.
- Boiled water. Honey doesn’t dissolve in cold water, so using warm water is key to this recipe. I use an electric tea kettle to warm up water quickly.

How to Make Honey Simple Syrup
Step 1:
Bring a cup of water to a boil. While you wait, add a 1/2 cup of honey to a small glass mason jar. Make sure you use a jar that is at least 12 ounces, so there is room to stir.

Step 2:
Once the water is boiling, measure out a 1/2 cup of boiled water and pour it into the jar of honey. Use a whisk to stir well until the honey dissolves in the warm water.
Alternatively, you can secure the lid on the jar and shake well. When the simple syrup has a smooth, runny texture, it’s ready to use.

Storage Tips
This liquid honey can be stored in the fridge for up to 1 month. Feel free to double or triple the recipe, if needed. Using equal parts honey and boiled water makes it easy to scale.
Drizzle it into your iced coffee or use it as an alternative to maple syrup for pancakes and waffles!

- ½ cup honey
- ½ cup boiled water
Instructions
- In a 12-ounce or larger mason jar, combine the honey and boiled water. Whisk well until the honey has dissolved.
- Secure the lid on the jar and store it in the fridge for up to 1 month. Use this liquid honey to sweeten cold drinks or cereal. (It's great in cases where regular honey might not normally mix in easily.)
