Back in college, when I first ventured into the world of veganism, one of my favorite desserts was vegan peanut butter fudge.
Loaded with margarine and powdered sugar, it wasn’t any healthier than non-vegan fudge, but it was easy to make and tasted absolutely delicious.
This is kinda like that fudge.
Still quick and easy to prepare, this peanut butter fudge is much healthier than the original, using only a handful of wholesome ingredients. It’s perfect for those moments when you need a sweet treat in a hurry!

Quick Peanut Butter Freezer Fudge
makes about 12 pieces, depending on size
Adapted from Raw Almond Butter Fudge
Ingredients:
1/2 cup natural organic peanut butter
1 tablespoon raw honey, or sweetener of choice
1/2 teaspoon vanilla extract
1/4 teaspoon fine sea salt
2 tablespoons coconut oil, softened
Directions:
Combine all of the ingredients in a small bowl, and mix until a smooth batter forms. Transfer the batter to a dish lined with parchment paper, and smooth with a spatula.
Place the dish in the freezer, and allow to set for 20-30 minutes, or until firm.
Cut into squares, and serve immediately!
Note: This fudge is temperature-sensitive, so be sure to keep it stored in the freezer until right before serving.

This looks delicious! Whole Foods has a vegan fudge that I love, but it too is loaded with some ingredients I react negatively to. I’ll have to give yours a go….right after your almond butter fudge I’ve been meaning to make. 😉

I notice you and a number of other health bloggers I follow use a lot of coconut oil. I have heard mixed opinions about this saturated fat and would like to hear why you are so in favor of it. I am looking to incorporate it in my diet in an effort to increase healthy fats and create a leaner physique, especially through the abdomen. Any advice or information you could provide about how to best use it and in what daily amounts would be helpful. Thanks. As always, love your posts!

So I am in love with this recipe! It’s just so creamy and wonderful… and EASY! I tried it first with a thicker bar like you have pictured, but I so prefer it spread thin so that it sort of melts in your mouth. YUM. I had a hard time not licking my bowl clean the first time I made it haha. Thank you for posting this! This is actually now my favorite quick dessert 🙂 I’ll have to try the almond butter version as it’s my favorite nut butter, this is just the one I decided to try first and it’s hard to switch since it’s so yummy!
Oh god. I’m a self-confessed peanut butter addict, these are in the freezer right now! however, I only made a super tiny bit (just enough to satisfy myself) and I put it in mini cupcake paper cups instead 🙂
I have been making this and keeping it in the freezer for a quick and easy dessert or snack. My husband loves it! I try to keep some in the freezer at all times so I end up making it almost weekly.

OMG — this was delicious but I used coconut butter instead of coconut oil.. I also doubled the recipe.

Totally delicious! I made two variations.
In one I added two tbsp of sugar free naturally sweet strawberry preserves to them. I put a small dollop in each, in about 16 mini paper cups. I used a mini muffin pan. They were amazing! Like mini PB & Js. Yum!
In the other I added two tbsp of good quality unsweetened cocoa and an additional tsp of maple syrup. I didn’t have honey. Also got 16 mini pieces of fudge.
So amazing and healthy!

I just did this recipe with almond butter. I also made an off the cuff crumble to go on top. Poppy seeds, coconut sugar, cacao nibs, dates pitted and chopped (or pulled), and raisins. I hope it turns out well!
Oh yeah… I also added a tiny bit of coconut flour.
This turned out great. My kids loved it but does melt quickly as my toddler discovered!

Just make this! Omitted sweetener. Added unsweetened coconut and sprinkled coco powder on top! So goooood, thanks for the inspiration.
This was a good recipe, thank you. Loving chocolate I prefer your chocolate freezer fudge more, but this worked while we were out of cacao powder.
yum yum! i made 1/4 of the recipe because i have no self-control around peanut butter 😉 and these taste delicious! filled up two silicone muffin cups.
