Pizza-Roasted Veggies

I’ve got a quick, super-simple recipe to share with you today.

It’s quickly become one of my favorite dinners ever!

Pizza-Roasted Veggies

Ingredients:

Veggies of choice (zucchini, broccoli, cauliflower, green beans, you name it!)
High-quality marinara sauce (Paesana is my favorite brand)
Raw goat cheddar

Directions:

Preheat your oven to 350F. Rinse and chop up the veggies into bite-sized chunks:

I used zucchini this time around, but it’s delicious with any and all non-starchy veggies!

Transfer the veggies to a medium-sized mixing bowl, and toss them with enough marinara sauce to coat (instead of oil, like you would traditionally use for roasted veggies), then arrange the veggies into a single layer on a baking sheet.

Roast in the oven for 15 minutes, then toss the veggies with a spatula and roast for another 10-15 minutes, or until tender. (time varies depending on the veggies you’re using)

Remove the baking sheet, and shred the raw goat cheese over the top:

Return the baking sheet to the oven for another 5 minutes, or until the cheese is hot and bubbly.

Serve immediately!

I topped mine with a bit of nutritional yeast, for an extra-cheesy flavor! :D
