Believe it or not, salads should taste good.
Not just good enough that you’ll eat it because it’s “healthy.”
I mean, they should taste really good. So good that you’ll crave them again and again.
A delicious dressing is the key to any tasty salad, if you ask me, and this refreshing twist on a lemon vinaigrette definitely fits the bill. Bursting with bright lemon and lime juice, a bite of fresh ginger and garlic, and a touch of honey, this oil-free dressing will make your taste buds sing!

Lemon-Lime Dressing (Oil-Free)
makes about 1 1/4 cups
Ingredients:
1/2 cup fresh lemon juice
1/2 cup fresh lime juice
2 cloves garlic
1-inch knob of ginger, peeled
2 1/2 tablespoons raw honey
2 tablespoons Stone Ground mustard
Directions:
This recipe couldn’t be easier–> simply throw all of your ingredients into a blender, and blend away until smooth!
This dressing should keep well in a sealed container in the fridge for up to a week–> so you’ll have no excuses for not having time for a quick salad!

I’ve been drenching my salads in this dressing for the past month, and I still can’t get enough of it. You know a dressing is good when you’re tempted to lick the bowl afterward.

Sounds yummy! I recently made a creamy dill/cucumber dressing that I’m loving, but this one will be next! Quick question.. is the mustard taste really strong? I’m definitely not a big mustard fan but I know it hides well in some recipes and gives them a nice flavour… what d’ya think?
I didn’t find the mustard taste too strong, but I do love the taste of mustard… so I might be desensitized to it.
I’m sure it would be delicious without it, too!
I’m totally trying this. I never even thought to have salad without oil…I guess with cheese or avocado you don’t really need extra fat. Win!

That’s a bummer! I bet you could omit the mustard, and probably substitute a splash of apple cider vinegar for a similar flavor.
I am making this all the time since you have mention it before in your blog, but you have been using only lemon and stevia so I use only lemon and stevia. Do you still not use stevia? have you find some differences?

I agree…salads should taste good…I have been enjoying amazing salads with beets, cherry tomatoes, celery, scallions, and goat cheese…oh so good!
