I think 2016 might have been a peak for “bowl meals,” but I hope it’s still cool that I’m on the bowl bandwagon– because bowl meals, like this Vegan Burrito Bowl, deserve to stick around. They’re just so convenient and satisfying!

This vegan burrito bowl with sweet potato “rice” is so easy to make. I whipped it up using my Nutri Ninja® Nutri Bowl™ DUO™— which I had the opportunity to try while working on my cookbook, No Excuses Detox. I love this machine because it fits perfectly into my new book’s budget-friendly theme. It is an affordable multi-tasker that doesn’t take up a lot of counter space, and it actually blends similarly to my Vitamix, which is seriously saying something. (You know how critical I can be of blenders, even when I receive them for free.)

What’s cool about the Nutri Ninja® Nutri Bowl™ DUO™ is that it is a personal-size blender and food processor in one compact machine. I’ve used it to make my morning smoothies, and it breaks down even my toughest ingredients like dates, chia seeds, and ice cubes into a smooth and creamy, milkshake-like consistency. This is the feature that sold me on this machine, as I’ve never found another blender at this price point that can break down my smoothies so well.

ninja-blender-auto-iq

I use it most often to blend up my weekly salad dressings, because you can use the same cup that you blend in as a storage container– so you don’t have to wash out a blender container when you’re finished. Simply twist on the pour spout lid and you’re good to go! (Perfect for taking smoothies on the road, too.)

This machine also comes with a bowl attachment, so you can whip up your favorite dips, like my Zucchini Hummus, quickly chop veggies for a weeknight stir-fry, or easily create veggie rice to use in recipes like this vegan burrito bowl with sweet potato “rice”. It’s a perfect mini food processor!

In the meantime, I hope you’ll enjoy this Vegan Burrito Bowl, featuring sweet potato “rice” as a more nutrient-rich base. It takes less than 30 minutes to prepare, and makes a comforting winter meal that is naturally gluten-free and loaded with nutrients. For a paleo alternative, feel free to skip the beans and add in your favorite high-quality protein of choice.

Vegan Burrito Bowl with Sweet Potato "Rice" (And a Ninja Giveaway!)
Author:
Serves: 2

A quick and healthy burrito bowl made with sweet potato "rice" for a nutrient-rich meal.
Ingredients
For the bowl:
  • 1 teaspoon extra virgin olive oil
  • ½ red onion, chopped
  • 1 bell pepper, chopped
  • 1 clove garlic, minced
  • 1 (1.5 pound) sweet potato, peeled and cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ¾ teaspoon ground cumin
  • 1½ cups cooked black beans, or 1 can drained and rinsed
Optional Toppings:
  • Freshly chopped tomatoes
  • Diced red onion
  • Fresh cilantro
  • Sliced avocado
Instructions
  1. Heat the oil in a large deep skillet or Dutch oven over medium heat. Sauté the onion, pepper, and garlic until they start to soften, about 5 minutes.
  2. While the veggies are cooking, process the sweet potato chunks in a food processor to create a rice-like texture. Add the riced sweet potato to the pan, along with the salt, chili powder, cumin, beans, and a splash of water to help prevent sticking. Cover the pan with a lid and let the vegetables cook until the sweet potato rice is tender, about 8 minutes.
  3. Adjust any seasoning to taste, then serve warm, topped with freshly chopped tomatoes, onion, cilantro, and sliced avocado as desired. Any leftovers can be stored in an airtight container in the fridge for up to 3 days.

nutri-ninja-review

Note: You can speed the chopping process by using the Nutri Ninja® Nutri Bowl™ DUO™ to dice the red onion, pepper, and garlic. I did this first, then processed the sweet potato rice while the veggies were sauteeing, to use my time as efficiently as possible.

Hope you enjoy the burrito bowls!

I’m really excited by this new product, considering your review. It would be great to make smoothies in the morning and salad dressing and any kind of veggie rice; sweet potato, cauliflower or broccoli. It does seem more convenient than hauling out my VitaMix all the time, hope it is just as powerful.

I would love this for the reason you stated, as a mini food processor! I would make your sweet potatoe rice. That sounds really yummy. I’m not down with the one-dish fad fading out.

  29. Diana Metz

I have a wonderful Carrot ‘rice’ I make with onions and seasonings. It would be nice to make this with the Ninja Bowl as it would be simpler than the way I do it now.

I would love to use this machine to try making homemade nut butters with various nuts and flavors!

  38. Meagan

This would come in so handy! there’s a lot of recipes that you’ve posted I haven’t tried because I don’t have a blender 😁 Fingers crossed!

  39. Teresa

I’ll be starting with your Vegan Burrito Bowl with Sweet Potato “Rice” followed by your Mexican Butternut Pilaf from Everyday Detox. Oh, and then there will be the salad dressings…oh yum!

  40. Patricia B

I found your review enlightening since I saw the Nutri Ninja Nutri Bowl DUO; I currently have the Nutri Nija and its great for smoothies. I like the idea of blending/chopping items together and then using the same container to store it. Makes its so much easier since I’m now an empty nestor and I’ve had to cut my recipes in half this would make it so much easier. Thank you for your review!

  41. Debbie Forrester

I’d definitely start with the recipe above. I love sweet potatoes spirialized, so using the Ninja to make sweet potato ” rice” sounds yummy.

  42. Stacey Murphy

Pick me pick me!! I love all your recipes and smoothies and have a nutribullet that is giving up the ghost… I would love to have the ninja for the chocolate cherry smoothie and try the vegan sweet potato burrito bowl as well – yum!

  43. Aenia

My food processor actually broke, so the timing is perfect! I would first use it for my go-to nut butter date paste (soaked dates + lots of nut/peanut butter + small amount of date sweetened water to keep its thick consistency)! Other recipes would include: your chocolate chia pudding, cashew cream, dressings and sauces, nut butters, chocolate peanut butter shake. In my college apartment, my kitchen is tiny, so this compact size would be perfect for my counter space. Plus, the clean-up sounds like a breeze!

  44. Di

Not to piggy back, but this recipe is what caught my interest. I never thought to use sweet potato as rice! I would also love it for smoothies. Been doing the 3-week plan you created and this would be incredibly helpful in continuing on.

  45. Tori Wender

I’m really intrigued by this sweet potato rice, and always need another smoothie maker 🙂

  46. Milissa

Smoothies, for sure and butternut squash “pilaf” with spicy vegan chorizo sausage and a roasted red pepper cashew cream sauce. And nut butter!

  47. Kim Bloch

I currently have a nutri bullet which works fairly well for smoothies but cannot chop any veggies.. Would love to try your sweet potato rice bowls…looks delicious!! I also like that it is compact for lack of my counter space

  48. TJ Sparkes

sweet potato/cashew legume-free hummus, avocado “mayo”, nut butter/avocado/fruit bowls. Smoothies!
My old Cuisinart mini chopper bit the dust and my OLD OLD Waring Blender just can’t hack it. I’m in the everloving debate on which whizzer-upper to spend my hard earned greenbacks on.

  49. Chelsea

I would love to use the Ninja to blend creamy, vegetable packed smoothies for my picky toddler! It’s a struggle to get her to eat a full serving of vegetables every day. Luckily I am able to sneak some into her smoothies, but my current blender can’t break down the tougher, more fibrous vegetables she needs.

  50. Debbie smith

This has my mouth watering! I would make it for sure and use the ninja for so many things on this new journey of mine to eat better

  51. Jessi

I would love to use it for baby food and that wonderful banana “ice cream” that my toddler doesn’t know is good for her 😊 Thanks for the chance to win!

  52. Janet L

My husband would absolutely love it if I made cauliflower alfredo sauce! However, several of your chocolate smoothies/shakes are high on my list to try. Thanks for all of your wonderful recipes!

  53. Alex

I would make vegan cheese sauce for nachos, and may as well make some salsa too, since this also has chopping capability!

  54. Rebecca

I would love to try cauliflower rice and now (honestly would’ve never thought of) sweet potato rice!
I’ve bought cauliflower rice before and I loved it! The only down fall is the price. And I’ve yet to take the time to actually try and make my own….Since I am gluten free, I’m always looking for budget savvy ways to prep awesome meals!

  55. Linda Peterson

I would love to make this recipe. I also like to use finely cut up cauliflower to make pizza crusts.

  56. Isabelle

I would LOVE to win this blender! I am leaving my parent’s house next year for university and I like to cook a lot, so it would certainly help me in my apartment! I would blend my smoothies, which I am a huge fan, like you. For the food processor side, I would probably make myself some cauliflower rice, energy balls, or brownies and bars that require smoother batters!

  57. Erin Estrada

If it can actually break down chia seeds like you say that would be amazing for this price! I would make chocolate chia shakes everyday woohoo!

  58. Sharon

Smoothies, dressings, cauliflower rice and snacks (I.e. Date balls), this product looks awesome! I’ll definitely have to check it out 🙂

  59. Sharon

I’d make smoothies, dressings, cauliflower rice and snacks (I.e. Date balls), this product looks awesome! Thanks for sharing pics/tips! 🙂

  60. Kathie Warthen Nelson

This recipe sounds wonderful, and so does the Ninja! I bet it would work well when I make cauliflower tabouli, too!

  61. Elizabeth

I’d love to make the recipe in this post! Also smoothies and dressings. I have a blender but this would be nice for single serving smoothies.

  62. Cara

I would make up daily smoothies and dressings for sure! I love making cauliflower rice so this machine could be my go to!! I have kicked off the new year with a new exercise program and this certainly would help me keep on track…Thank you for the chance to win and for all your hard work ☺

  63. Becca

Used this recipe for dinner tonight ~ my family loved it! Will be a repeat and would love a new product for more experimenting!

  64. Sanya

I would use it to make smoothies, hummus, salad dressings, cauliflower rice – the possibilities are endless!!

  65. Kristen C.

I would do all sorts of things but I especially love the idea of making salad dressings in the same container that I would store and pour it from. That is awesome!

  66. Lynn

Smoothies are my go to breakfast workday mornings with greens, fresh ginger, frozen fruit and etc. I would love to try smoothies in this awesome blender.

  67. Kristen

I would love to try soups in this blender. Can’t wait to make the vegan bowl. Thanks for posting!

  68. Lynn

I would like the Ninja to make an alfredo style sauce with cauliflower. Saw it on Rachael Ray’s show today.

  69. Kathi H.

I would make smoothies and salad dressings while taking care of baby #4 who is due in a couple weeks!

  70. Angie B.

I would definitely make this burrito bowl, as well as a number of smoothies, guacamole, hummus, etc. 🙂 And share them all with family and friends.

  71. Sarah

I’m obsessed with your blog. I’ve bought your book for several people as gifts. I’m expecting a new baby in March, and would love to use the blender to make healthy smoothies for me and my growing family.

  72. Erika Wyckoff

Delicious!!!! I love sweet potatoes and cannot wait to make this. It would be awesome to win the Ninja so I could make this in no time.

  73. Kimley Jones

There are so many things that I would like to make with this machine. Smoothies , salad dressings and sweet potato rice to name a few things.

  74. Erin F

I am always reading your blog for ideas and experimenting. Our teen daughter has recently decided to go vegan so I am constantly trying to mix up our recipes and help her make good healthy and yummy choices. I would love to try this recipe in the blender:

Warm Blueberry Chia Pudding for Breakfast
We love smoothies but in the cold NY winters, I like to make something thick and comforting to start our day. So rather than the usual oats and fruit, I wanted to make a yummy fruity pudding.

    1/4 cup chia seeds
    1/2-3/4 cup of Almond Milk
    1/2 cup frozen blueberries
    1/4 Tsp Vanilla
Kuzu Root Starch for thickening (according to package directions. I used 1 TBSP but like it very thick.
(Maple syrup, slivered almonds and diced bananas to finish if you like).

Cook first 4 ingredients in a small saucepan for 5 minutes over low/medium low heat. Take off heat then smooth in blender until creamy. Return to low heat. Add Kuzu and warm to thicken. When mixture has reached a thick pudding like consistency, pour into bowl and top with desired sweetener, fruit and nuts.

  75. Nicole

I would make this vegan burrito bowl! Looks SO yummy nom nom nom! And what a cool concept, blender and food processor in one! Awesome! 🙂

  76. Tracy

I would like to make everything you mentioned in this post. I have sweet potatoes on the counter right now so will try the burrito bowl tomorrow. Thank you for the post.

  77. Art huprich

I would make cauliflower pizza crust and use the Ninja to turn the cauliflower into a rice like substance.

  78. Andrea

I like the idea of a to-go smoothie without an extra thing to wash! My current blender does not blend dates at all, so I would love to be able to use them in a smoothie! My current favorite smoothie is banana, spinach, walnuts, blueberries, hemp powder, and cocoa. I highly recommend this combo!

  79. Lindsay Kilburn

I have a gluten sensitivity in which I became a vegetarian in my early 20s, I am now 34 and the need for veggies to take the place of rice, or any other carb, was something I have been experimenting with way before the fad started. I have such a challenging time based on lack of time being a mom who works multiple jobs, like many others just trying to squeeze in the norms of life in a hectic schedule. The process although so rewarding is lengthy, and frankly I don’t have the time some weeks. So it’s salads and smoothies, although healthy and good, not pizza with cauliflower crust that’s for sure. I force that one evening in which I stay up late to make all the “rice” for all the fun meals, freezing As much as I can. This is turning into a sob story, but trust me its not lol. My daughter loves all your recipes as I have been a dedicated fan foodie of yours since your first book and still use it, along with Natalia Rose. You may be in the same line of work, but I think you are both inventive and truly care about the individuals that get your book because you know the dedication is already there by purchasing your recipes, books, and other key parts of this lifestyle. With all this being said I am suppose to post what I would make with the Nutri Ninja Nutri Bowl Duo, the possibilities are endless! Some favorites are Asian cauliflower broccoli and rice bowls, zucchini rice with avocado and tomato as a salad with a bit more texture. I Pair quinoa with broccoli rice, add black beans and “cheese” and salsa, for a southwest version, and of course cashew rice, blended dates with agave and chocolate cacao to make cashew date truffle balls for dessert. These are only a few, and well worth the process, but I bet would be easier with a dedicated “rice” bowl blender. Looking forward to your new book ordered it last year on preorder, can’t wait to see what’s evolved! Thank you for listening to me ramble:-)

  80. Julie

Well, if this isn’t just AWESOME!!! If I won this I would make everything in it. I don’t have any food processor and it’s been on my list for a while. So I would say if I won, I’d have to start with my lucky Vegan bowl with sweet potato! Looks delicious. 🙂

  81. Patti

I would like to “rice” everything in sight…yams, zucchinis, carrots, onions, purple sweet potatoes

  82. Dana

What wouldn’t I use it for might be the easier question to answer. Salad dressings, smoothies, nut butters I hope. The list is endless. A busy woman’s survival tool 👍

  83. Emilie King

I’d make some on-the-go superfood energy balls with lots of maca, gogi berry and everything in between 🙂

  84. Kelly

I have the first generation bullet that’s barely hanging on and the bowl to my food processor just broke. So I would love to win the nutri ninja nutrition bowl duo for my smoothies, nut butters, and granola bars.

  85. Victoria Peters

I am trying. to eat a better diet in order help numeral with health issues caused by Multiple Sclerosis (MS). I have every limited energy due to MS. This tool would make what seemed impossible doable.. It would be highly valuable.

  86. Lisa Bishop

It would come in handy when I make this DELICIOUS looking recipe! Also hummus and pesto would be a snap🥗

  87. Liz Johnson

Sweet potato “rice”? Brilliant! I would absolutely use the awesome Ninja machine to make this recipe! Also, smoothies, salad dressings, soups, Lactation energy balls, etc. I would LOVE to own the Ninja!

  88. Emma

I love all your recipes Meghan! I love how veg-based is your theme and everything else builds off. That’s how I have to do Paleo. I could also REALLY use a good blender!!! I stopped buying blenders whenever the last one broke and use my food processor for everything. And while my kids are used to slightly chunky smoothies they would be ecstatic about milkshake consistancy. I love to make your salad dressings and the idea of the personal blender cup/container sounds so easy! Thanks!

  89. Catlin Thompson

There are so many awesome things i want to do and try!! I love to cook and am always borrowing my mom’s “this and that” because I don’t have a food processor, vitamix, etc so having a little extra NINJA help in the kitchen would be amazing!!!

  90. Ashley

Definitely this recipe, but smoothies and protein shakes every day! It will be fun to come with new recipes or try yours with this cool “toy”!

  91. Crystal

Thank you Megan for the chance to win a Ninja Blender! I currently rent a room and have limited space so having this blender would be perfect for my room. I would love to make smoothies, salad dressings and the vegan burrito bowl and so many more recipes from your website!

  92. Sara

Oh man, I would make dressings way more than I do now. It just seems like it would be so easy! I would also make sweet potato rice.

  93. Emily M

Oh I would definitely use it for chopping Andy mincing veggies. And zucchini hummus as well! I can’t wait for your next cookbook!!

  94. Robyn Chester

A one stop shop would be the Ninja’s delight for me. I’m a wheelchair user (I’m so not pulling that card tho lol!). I can still weight bear (just not walk) so standing still with my veges and nuts and grains around me (and not having to move around to use other equipment) making dressings, and dinners, smoothies (I’m a vegetarian) with a Ninja, would mean I am more able to be healthy under my own steam. . Cooking is the activity I miss the most so this would be such a help to to empower me to be more independent – making my own healthy food in a one-stop-shop kinda way! Your recipes Megan are within my capabilities and I can’t tell you how much I love that. Loving your recipes, and blog and the Facebook group for even more inspiration Megan. Thanks so very much.

  95. Jerri

Right now, I am loving riced cauliflower in so many different ways. I would love to be able to make my own, as well as my favorite white bean hummus. BTW…I have just recently signed up to receive your posts and am thoroughly delighted with each recipe that I have tried. Thank you for your commitment to healthy eating and the time you dedicate to testing recipes.

  96. Monica

I love making smoothies but my blender is that good, so definitely smoothies. Also would love to try sweet potato rice!

  97. Amanda Hainer

I recently had to go vegan for health reasons and this ninja would really help make it easier to cook yummy things from your recipe books!!

  98. Kimberly

I love all things smoothies lately – especially for dinner since I’m in my 3rd trimester and they are healthy and easy to digest before bed! I would also love to make different veggie “rice” with it – yum!!

  99. Joyce

Your burrito bowl as a starter. Cauli rice with cilantro and lime. Fruit smoothies with avocado and coconut milk.

  100. Linda

I would definitely make this recipe since I had never even heard of sweet potato rice before. Would love to be able to make wonderful smoothies as well along with some delicious creamy soups.

  101. Kimberly

My baby just got the go ahead to start puréed fruits and veggies. I’d like to make my own instead of buying so the ninja would be perfect!

  102. Jetske

This looks and sounds absolutely brilliant! I have been looking for a new substitute for my stick blender set + accessoires. It has been coming to an end for at least a year now, and even though it is still relatively decent at keeping up with me – I’m gonna need a new alternative soon. Ideally I would like to use a new alternative for my cooking and then use the old set for DIY cosmetics like whipped body cream etc. For as long as the old one would work that is 🙂

Your recipe sounds delish, obviously I woud be making that one first! 😉 Minus the bell peper for me, but I really love the idea and it seems a quick and easy one. That’s what I like about your style of cooking, the ”lazy cook” style – as I believe you have called yourself in the past. At least I know I am one! But without compromising on the results, of course!

I would also use the Ninja for small(er) batches of anything like dressings, snacks, food for kids, toppings for my fruit crumbles, marzipan, pestos, to quickly chop/rice veggies… I think it would be perfect because it would mean less dishes/a smaller device to wash up. Especially nice for me as I’m dealing with health challenges, but stll wanting to make proper and healthy homemade food!

  103. Linda

I love to rice vegetables but I currently only have a small food processor. What a message it makes. This would make it so much easier! I also can’t wait to try the sweet potato rice!

  104. Stephanie

I’d love to try the recipe above. Then maybe some falafel wraps from Everyday Detox…and of course the famous chocolate superfood shake along with other smoothies! 😊

  105. Kinsey McHone

I would definitely make rice out of everything… broccoli, cauliflower, and I’m dying to try sweet potato rice! Not to mention how convenient it would be to have the veggies practically chop themselves. Awesome!

  106. Ingrid King

The better question is probably “what wouldn’t I make with the Ninja!” I want to incorporate more green smoothies into my diet, and I also want to start making my own salad dressings. And I love soup, so I know I’d use it for that!

  107. Sarah Rogers

What wouldn’t I make? Since my obsession with your first cookbook I find myself blending all the things. Rice, dressings, ummm roasted veggies into burger patties and loafs! Delish

  108. Rhonda

I love the idea of using this to make salad dressing! I hate having to use my big vitamix to make a little bit of dressing and then having to wash it. Small and same container sounds perfect.

  109. Ktistana

I’m heading off to college in a few months and this sounds like it would be the perfect single person replacement for my mom’s vitamix that she won’t let me take. 😉

  110. Rebecca

It is so lame, but I find making cauliflower rice a pain in the butt. I bet this would make it easier!

  111. Michelle Wilford

I am trying to live a healthier life. This Ninja would make that so much easier. I would start ricing my cauliflower. I would also use it to incorporate more veggies in my meals

  112. Anna

I would use it for likely everything! Ricing veggies, dressings, smoothies! This reminds me of you butternut pilot recipe from your first book, a stand by for our family! When squash are readily available we eat it like every other week! I can’t believe I didn’t think of using sweet potatoes in the same way! Thank you!

  113. Chelsea

Looks so yummy! I’d use it to make this bowl for starters, and then I’d make smoothies out of everything in sight!

  114. Sandra

Hmmm. The list of possibilities seems endless. First would be smoothies cuz I love them so much. Salad dressings and sauces. I’m very much interested in giving the “rice” a try. The Vitamix still seems to be a little intimidating for my husband and son. Having one that’s a little smaller will allow them to make more smoothies that they like.

  115. Jenna

I would make lots of recipes from your Everyday Detox book along with baby food for my son. I love everything you make!! Thank you : )

  116. Alexandra

Oat flour for your lactation cookies! And 33 weeks and I lived on those with my last pregnancy.

Also, any number of your smoothies for me and my toddler to share- we drink on together every morning and I hate finding little chunks of spinach…

  117. Susie

I would love this Ninja to make my smoothies, salad dressings and energy balls. My food processor is about to die!

  118. Samantha

I would probably first start with a gazpacho recipe since I absolutely love the soup as a way to get more veggies and hydration in my diet!!

  119. Shirleen

I would love the Ninja to make morning smoothies (trying to start days off healthier this year!), homemade nut butters, hummus, dressings.

  120. Julie Baergen

I will use this first for paleo mayo, then other salad dressings, smoothies, and cauliflower rice for pizza crusts and sandwich “bread”. Can’t wait!

  121. Candace

Salad dressings, smoothies, chop veggies….basically I’d use it for EVERYTHING! Haha
But I think the first thing I’d make is cauliflower fried “rice” YUM!

  122. Sabrina

I’ve never seen this Ninja before!!! I would love to try using it with the recipe above along with zuchinni and carrots! Thanks for a great recipe AND giveaway!

  123. Dana

I would make smoothies, rices, and salad dressings in this new blender. I would also like to try nutter butters. Thanks for the giveaway!

  124. Michele W

I would use the Ninja for many of my cooking needs. I have been learning how to cook all over again since sustaining a brain injury but I find that by the time I finish cutting up veggies I’m too exhausted to eat. As a result I don’t cook as often as I would like, especially if I want to lose all the weight I’ve gained since the accident. And I love the idea of ricing sweet potatoes. Sweet potatoes are a long time favorite of mine and this recipe looks like a quick, easy, and interesting way to eat more of them. Thanks for the chance to win!

    1. Laura C

I make a green protein smoothie every morning, so this would come in handy with the cup ready to go! Also, I lean towards being more plant-based, and this seems like it would quicken the veggie chopping process, make it fun, and “sweeten the deal” –so to speak –of eating healthy!!

  125. Lynn Koeppen

I’d love to win a Ninja so I could make all my own salad dressings. Your recipes are all great!

  126. Penny S.

I am totally still on the “bowl” bandwagon with you! They are easy and REALLY satisfying!

I’ve hear a ton of great reviews about the Ninja but I am a skeptic! I would love to try this recipe!

  127. Eliz

    Doesn’t hurt to try, eh?
I would make mayo. I love making my own but I’d love to scale down from making it in the food processor. Once you make your own mayo, buying the jarred stuff just ceases to appeal.

  128. Jennifer H

The first thing I would try making would be this burrito bowl! I love the idea of sweet potato rice!

  129. Jess

I’ve had my eye on a Ninja for a while now! I would love to make this recipe, for one! I also love making mock larabar balls.

  130. Melissa

I’d like to use the Ninja for adding greens like spinach to my toddler’s pancakes, blending in the greens to make his pancakes. The greens add extra nutrition but no bad taste.

  131. Karen

I would make tons of smoothie bowls and raw cashew cheesecakes! I have a food Instagram and they’d be so pretty. For main meals I’d chop veggies and make cauliflower rice.

  132. Amelia

Um…apart from every recipe you post…ah,everything! Your almond joy bars, peanut butter bars, klondike bars and date squares are some of my faves! My $10 blender just aint doing the job though. Omg I think I may have some serious sweet cravings now xx ♡♡

  133. Nicole

I’d make dressings, sauces, soups, smoothies and just about anything from your blog! Love your recipes, love Ninja and love the fact that you’re doing a giveaway! Thank you!

  134. Zoe

I would love to make use this for my breakfast smoothies and to make pureed soups! Yum! Thank you for all the amazing recipes.

  135. Jen

I love anything with sweet potatoes so I would start with this. Also would be able to make date bars and more smoothies.

  136. Noelle

If I won the Ninja, I would make all of your recipes, especially the ones with nuts, that look so great but I haven’t been able to make yet since I don’t have a proper chopping machine! That would be very exciting!

  137. Sarah

I would use this for so many things. The veggie bowls, esp this one as it looks awesome and I bet my kids would like it too. Also smoothies! That is how I get more avocado and greens into my kiddos. I bet it would make good nut butter or flour as well.

  138. Meagan

I would love to make LOTS of smoothies and things like cauliflower rice! So many options and so many places to start! 🙂

  139. chloé thiland

Hi I would love to make my morning smoothies and banana ice cream with the ninja blender!!

  140. Dhana

If I had a Ninja, I would TOTALLY make this recipe! OMG! And then I would make riced cauliflower for pizza crust because I have been DYING to make that! I love pizza and the current diet I am on, I can’t have real dough.

  141. Judith Whpple

I recently tried ‘cauliflower’ rice to make a batch of fried rice. It was amazing! I would definitely use the Ninja for more of that! Love, love, love sweet potatoes, would really like to make this recipe bowl, looks great and I will be making it soon. And I do smoothies five or six times a week, sounds like just the tool to them easier. In fact that Ninja sounds like an amazing tool for any kitchen. Thanks for the give-a-way.

  142. carol clark

id use it to make all my foods so i can be healthy i mean im so tired of all the procesed food i want to go natural and this would help me

  143. Cattina

…Not that I ever win anything, but… I think I’d start with this recipe. It looks amazingly good and it’s making me hungry already…

  144. Faye Fitzhugh

I would make a vegan cheese sauce/dip, hot soups, chocolate banana smoothie, homemade mayonnaise, and try my hand at/attempt homemade nut milks.

  145. Krissie E.

    I subscribed with [email protected]

  146. Krissie E.

I like you both on Facebook and I also left a comment on the Ninja Post (and I tagged a friend)
My name there is Pudyqat Peacock

  147. Steph Morey

I’d be so excited to win the Ninja!!! I’d make anything and everything!! Haha! I’ve heard such wonderful things about them, I’d love to have one for my family!!

  148. Claudia

I would make more salad dresssings because it would be so easy to just add the spout top and store in the refrigerator. Love your blog. Just about everything I’ve tried either from the blog or your first book has been a winner! Keep going!

  149. Narissa Rampey

I think I could use this for veggie meatloaf combinations, for making humus, for blending soft veggies to make wraps with and of course nut grinding and making nut milks if I had one. I have a Vita Mix but it is large and heavy for me to lift each time I want to use it on my counters (since my kitchen is a little on the small size).
Thanks for everything you post! You’re about the only one I continually pay attention too! lol!

  150. Rebecca Shepard

Can’t wait to have this Ninja in my kitchen. Smoothies are made every day in our home and I’m sure the Ninja would be the plugged in and whipping up smoothies first thing.😃 During my Sunday meal preps I would like to try ricing cauliflower for our pizza crust as well. I’ve eyed this beast for some time now because I have so many things I would like to try.

  151. Tammy

I’ve preordered your new cookbook. I would use it for the recipes in the new cookbook, which by the way I can’t wait to receive it. I have your first one and absolutely love the recipes. I to have a Vita mix that I use all the time. My mom has one of these and I love using it when I go visit her. To have one myself would be awesome.

  152. Olivia K

I’d love to make more hummus and at home dips! I’m such a snacked I would love to make healthier options!

  153. Jessica Verdiglione

I would love a Ninja. It would definitely help me prepare more healthy meals and shakes. I really need to loose my baby’s weight and I can also make my own baby food it would be so wondeful for our family.

  154. Hannah Killian

The options are endless! Vegan/paleo/avo ranch, tzatziki, smoothies, butternut squash soup, falafel, cashew queso, curry, sweet potato hash browns-anything!?!? I’ve been needing a blender and food processor with my food allergies and crazy busy schedule! What an amazing blessing this would be 🙂

  155. Jessica Carbajal

I would love to try this ninja to whip up fast quick and healthy meals for my family. All your recipes look amazing and I just purchased your new book can’t wait to get my hands on it!

  156. Tony Van de Riet

The one tool I do not have yet to compliment my diet plan is a processor such as the Nutra Ninja NutriBowl. i think having one of these would take my food prep that extra step I need to continue my weight loss program as everyone knows food especially diet plan food can get a bit boring after a while, Being able to prepare the same ingredients different ways would be a huge help! Thanks for all the recipes!

  157. Heather

I would totally make this burrito bowl because it looks easy and amazing! Sweet potatoes are way better than rice!

  158. Laura

Oh I would so love to make small batches of nut milk, my morning matcha lattes and small batch chia pudding in this. It’s always hard with the vitamix to do smaller portions. And, I too am skeptical of other blenders. The smoothness you get with the Vitamix is just amazing But if you say so, I’m curious!

  159. Lee

Perfect for smaller recipes when my 11 cup is too big! Plus I love the idea of grab and go smoothies instead of needing another container.

  160. Jodi

I would love making salad dressing in this, so I wouldn’t have to make it in my big bender( it’s difficult to make dressing and single portion smoothies in a huge blender). The small processor bowl would be amazing, too! Oh the dips we could make!

  161. Heather

wow this thing looks amazing!!! i’d love to make this recipe… i’ve never tried sweet potato rice but that’s right up my alley!

  162. Teranne

Awesome! I’d make your shamrock shake, for one thing. It is my new favorite smoothie. I love that it tastes like chocolate chip mint ice cream. My food processor is the most used appliance in my kitchen! River cauliflower, dips, soaked grain pancake batter, smoothies and shakes, etc.

  163. Allison Shepherd

This looks awesome!! I would use it for your zucchini hummus and your raw falafel wraps, which are two of my favorite recipes. 🙂

  164. Jessica

I can’t wait to make my favorite pearl and avocado protect n smoothies with the Nutri Ninja® Nutri Bowl™ DUO™ and concoct other delicious beauty drinks. ✨🍵💕

  165. Cathy

The cauliflower nachos would be the first thing I’d try with the ninja. Or, perhaps my daughter would get it as a surprise present! Thanks for offering the place to dream ! (And drool!!!)

  166. Kath

Lots of things! But the first ones that come to mind are: nut butters, hummus, smoothies, and instant ice cream/sorbets from frozen ingredients. Thank you for this giveaway!

  167. GIna

WOW! I just saw your recipe for the “Vegan Cauliflower Nachos with Walnut Taco Meat” – I would use the Ninja for this one and ALL of your recipes! I love, love, love your stuff! Thank you for sharing!

  168. Heather

I love the idea of being able to make salad dressings in the nutri ninja! Right now I just chop everything by hand because my vitamin doesn’t beak down the garlic or herbs very well and I end up with chunks in the dressing, no fun.
I also love that it handles dates as I use them a lot for sweetening things and currently have to soak them a long time till they are like mush because my food processor won’t evenly break them down and I get chunks again. Would love the opportunity to try this new all purpose blender!

  169. Jordan

I would use this to make so many different things! Homemade hummus, obviously. Cauliflower rice for burrito bowls and stir fry. Green smoothies. Pureed soups. The possibilities are endless! Thanks for the chance to win!

  170. Ornela

Hi Megan, I love my blender but sometimes a combo of blender/ food processor saves so much time…I would use it to make a vegetable pâté with sauerkraut, soaked walnuts, herbs, leek, roasted pepper…a fabulous recipe that requires a food processor.

  171. Liz

    Hi Megan,
The burrito bowls sound yummy. I think I would use the blender to make salad dressing or energy bites. Thanks for the opportunity.

  172. Jessika

Oh my goodness, I love these new recipes! I’d totally love the convenience for my daily shakes!! And to make sauces!!

  173. Amber Wahlstrom

Oh man! This burrito bowl sounds amazing! Definitely the first thing I’d whip up with a Ninja!

  174. Barbara

Well, this recipe for starters! Sweet potato “rice” sounds delish! But, I just watched America’s Test Kitchen make Tapenade and one of these Ninjas would make it perfectly, I bet. 🙂

  175. Carry

Sounds fantastic! Both the recipe and the Nutri Ninja DUO! I can already think of so mant delicious things I’d use it for. I need this in my life!

  176. Cyrilla Massinda

Wow! The Ninja Duo sounds great! I make smoothies all day long and I would love to use this to make creamy smoothies as well as process my veggies so I can make cauliflower rice for the pizza recipe you have as well as millet veggie patties…my ultimate fave burgers! Thanks so much for the chance 🙂

  177. Paige

I would love to use this for my smoothies, salad dressings and baby food for the kids. I also desperately need a food processor as mine just broke. This would be the perfect addition to my kitchen as the busy mom of 2 girls- with girl #3 due in March!

  178. Christy

Hi, I hear so many wonderful things about the Ninja. I own a Vitamix that I feel is to big for the small cooking preps I need. The Ninja would be fun to use for salad dressings and my to go cup for my protein shakes.

Thank you for your time and posting your delicious recipes, I adore them. My husband is not a healthy eater as I am and my girls (2 and 4) are super picky eaters. I keep working with them.

  179. Joni

This burrito bowl sounds delicious, I would definitely make this right away! Thanks for the giveaway and the recipe!

  180. Jenna

I would love to try all of your smoothie recipes. My blender just does not pulverize some of the ingredients like it should. Thank you for making clean eating look and feel so easy.

  181. Koni Clark

I’d love to make smoothies & I’ve been wanting to take on a cashew cream sauce. My current blender just isn’t up to task. The burrito bowl sounds awesome & I’ll definitely be making it. My daughter just decided to become vegan , so it’s nice to find recipes, such as this, that I can make for her.

  182. Lisa

I would show my daughter, who is a senior and heading off to college soon, how to make healthy meals while at college. She will be living in an apartment style dorm so will be able to make her own meals!

  183. Nina

I would like to experiment with making nutritious, cost-wise meal supplements for the elderly that are housed in living centers and the like.

  184. Samantha Woods

The ‘weekly’ salad dressings idea is a GREAT idea! That’s what I would make bc then we’d eat more salads.

  185. Heidi

Besides this amazing dish, I would also make my way through all of your drool worthy dressings (the secret to loving salads! -Which you have the corner of the market on 😉 , plus your date sweetened desserts which are perfection. Thanks for making healthy eating so delicious!

  186. Dee

I’d start off by trying the cauliflower nacho recipe and then I’d make a stack of your cauliflower pizza crusts to keep in my freezer for those days when I work late and need a quick and healthy meal. Sweet potato rice would probably be close behind.

  187. E Sylvia

I’d like to make all the wonderful treats that involve processing nuts and dates with the Nutri Ninja® Nutri Bowl™ DUO™.

  188. Alicia Herrera

I am in love with your 1st book <3 I would like the Nutri Ninja Bowl Duo for all your recipies specially almond milk because my baby boy (4 years old) has cow milk allergie 🙁

  189. Felisha

Oh my goodness! Just added this recipe to this week’s meal board.. looks delicious!

I would love to make some superfood vegan pesto or saag in this Ninja! YUM!!

  190. Kendall mcleos

What wouldn’t I make. Your recipes, smoothies, salad dressings, hummus, and anything else that looked good.
