Vegan Burrito Bowl with Sweet Potato “Rice”

I think 2016 might have been a peak for “bowl meals,” but I hope it’s still cool that I’m on the bowl bandwagon– because bowl meals, like this Vegan Burrito Bowl, deserve to stick around. They’re just so convenient and satisfying!

This vegan burrito bowl with sweet potato “rice” is so easy to make. I whipped it up using my Nutri Ninja® Nutri Bowl™ DUO™— which I had the opportunity to try while working on my cookbook, No Excuses Detox. I love this machine because it fits perfectly into my new book’s budget-friendly theme. It is an affordable multi-tasker that doesn’t take up a lot of counter space, and it actually blends similarly to my Vitamix, which is seriously saying something. (You know how critical I can be of blenders, even when I receive them for free.)

What’s cool about the Nutri Ninja® Nutri Bowl™ DUO™ is that it is a personal-size blender and food processor in one compact machine. A quick and healthy burrito bowl made with sweet potato "rice" for a nutrient-rich meal.
Servings: 2
Calories: 640 kcal
For the bowl:
  • 1 teaspoon extra virgin olive oil
  • 1/2 red onion , chopped
  • 1 bell pepper , chopped
  • 1 clove garlic , minced
  • 1 (1.5 pound) sweet potato, peeled and cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin
  • 1 1/2 cups cooked black beans , or 1 can drained and rinsed
Optional Toppings:
  • Freshly chopped tomatoes
  • Diced red onion
  • Fresh cilantro
  • Sliced avocado
  1. Heat the oil in a large deep skillet or Dutch oven over medium heat. Sauté the onion, pepper, and garlic until they start to soften, about 5 minutes.
  2. While the veggies are cooking, process the sweet potato chunks in a food processor to create a rice-like texture. Add the riced sweet potato to the pan, along with the salt, chili powder, cumin, beans, and a splash of water to help prevent sticking. Cover the pan with a lid and let the vegetables cook until the sweet potato rice is tender, about 8 minutes.
  3. Adjust any seasoning to taste, then serve warm, topped with freshly chopped tomatoes, onion, cilantro, and sliced avocado as desired. Any leftovers can be stored in an airtight container in the fridge for up to 3 days.


Note: You can speed the chopping process by using the Nutri Ninja® Nutri Bowl™ DUO™ to dice the red onion, pepper, and garlic. I did this first, then processed the sweet potato rice while the veggies were sauteeing, to use my time as efficiently as possible.

    My food processor actually broke, so the timing is perfect! I would first use it for my go-to nut butter date paste (soaked dates + lots of nut/peanut butter + small amount of date sweetened water to keep its thick consistency)! Other recipes would include: your chocolate chia pudding, cashew cream, dressings and sauces, nut butters, chocolate peanut butter shake. In my college apartment, my kitchen is tiny, so this compact size would be perfect for my counter space. Plus, the clean-up sounds like a breeze!

    Warm Blueberry Chia Pudding for Breakfast
    We love smoothies but in the cold NY winters, I like to make something thick and comforting to start our day. So rather than the usual oats and fruit, I wanted to make a yummy fruity pudding.

    1/4 cup chia seeds
    1/2-3/4 cup of Almond Milk
    1/2 cup frozen blueberries
    1/4 Tsp Vanilla
    Kuzu Root Starch for thickening (according to package directions. I used 1 TBSP but like it very thick.
    (Maple syrup, slivered almonds and diced bananas to finish if you like).

    Cook first 4 ingredients in a small saucepan for 5 minutes over low/medium low heat. Take off heat then smooth in blender until creamy. Return to low heat. Add Kuzu and warm to thicken. When mixture has reached a thick pudding like consistency, pour into bowl and top with desired sweetener, fruit and nuts.

    I have a gluten sensitivity in which I became a vegetarian in my early 20s, I am now 34 and the need for veggies to take the place of rice, or any other carb, was something I have been experimenting with way before the fad started. I have such a challenging time based on lack of time being a mom who works multiple jobs, like many others just trying to squeeze in the norms of life in a hectic schedule. The process although so rewarding is lengthy, and frankly I don’t have the time some weeks. So it’s salads and smoothies, although healthy and good, not pizza with cauliflower crust that’s for sure. I force that one evening in which I stay up late to make all the “rice” for all the fun meals, freezing As much as I can. This is turning into a sob story, but trust me its not lol. My daughter loves all your recipes as I have been a dedicated fan foodie of yours since your first book and still use it, along with Natalia Rose. You may be in the same line of work, but I think you are both inventive and truly care about the individuals that get your book because you know the dedication is already there by purchasing your recipes, books, and other key parts of this lifestyle. With all this being said I am suppose to post what I would make with the Nutri Ninja Nutri Bowl Duo, the possibilities are endless! Some favorites are Asian cauliflower broccoli and rice bowls, zucchini rice with avocado and tomato as a salad with a bit more texture. I Pair quinoa with broccoli rice, add black beans and “cheese” and salsa, for a southwest version, and of course cashew rice, blended dates with agave and chocolate cacao to make cashew date truffle balls for dessert. These are only a few, and well worth the process, but I bet would be easier with a dedicated “rice” bowl blender. Looking forward to your new book ordered it last year on preorder, can’t wait to see what’s evolved! Thank you for listening to me ramble:-)

    This looks and sounds absolutely brilliant! I have been looking for a new substitute for my stick blender set + accessoires. It has been coming to an end for at least a year now, and even though it is still relatively decent at keeping up with me – I’m gonna need a new alternative soon. Ideally I would like to use a new alternative for my cooking and then use the old set for DIY cosmetics like whipped body cream etc. For as long as the old one would work that is 🙂

    Your recipe sounds delish, obviously I woud be making that one first! 😉 Minus the bell peper for me, but I really love the idea and it seems a quick and easy one. That’s what I like about your style of cooking, the ”lazy cook” style – as I believe you have called yourself in the past. At least I know I am one! But without compromising on the results, of course!

    I would also use the Ninja for small(er) batches of anything like dressings, snacks, food for kids, toppings for my fruit crumbles, marzipan, pestos, to quickly chop/rice veggies… I think it would be perfect because it would mean less dishes/a smaller device to wash up. Especially nice for me as I’m dealing with health challenges, but stll wanting to make proper and healthy homemade food!

    I would use the Ninja for many of my cooking needs. I have been learning how to cook all over again since sustaining a brain injury but I find that by the time I finish cutting up veggies I’m too exhausted to eat. As a result I don’t cook as often as I would like, especially if I want to lose all the weight I’ve gained since the accident. And I love the idea of ricing sweet potatoes. Sweet potatoes are a long time favorite of mine and this recipe looks like a quick, easy, and interesting way to eat more of them. Thanks for the chance to win!

    The one tool I do not have yet to compliment my diet plan is a processor such as the Nutra Ninja NutriBowl. i think having one of these would take my food prep that extra step I need to continue my weight loss program as everyone knows food especially diet plan food can get a bit boring after a while, Being able to prepare the same ingredients different ways would be a huge help!     Oh I would so love to make small batches of nut milk, my morning matcha lattes and small batch chia pudding in this. It’s always hard with the vitamix to do smaller portions. And, I too am skeptical of other blenders. The smoothness you get with the Vitamix is just amazing But if you say so, I’m curious!

    I love the idea of being able to make salad dressings in the nutri ninja! Right now I just chop everything by hand because my vitamin doesn’t beak down the garlic or herbs very well and I end up with chunks in the dressing, no fun.
    I also love that it handles dates as I use them a lot for sweetening things and currently have to soak them a long time till they are like mush because my food processor won’t evenly break them down and I get chunks again. Would love the opportunity to try this new all purpose blender!
