If you love Sweet Potato Toast, you are going to love Sweet Potato Pizza! Instead of making a pizza dough, roasted sweet potato slices are topped with your favorite pizza toppings for a healthy appetizer, or stress-free dinner idea.

Why You’ll Love Them

They are easy to make. The only prep work involved for this healthy recipe is slicing a sweet potato, then roasting it with a few seasonings. Once the slices are tender, you can add any toppings you love!

They are gluten-free. No specialty flours required!

They are nutrient-dense. Sweet potatoes are a great source of beta-carotene, which is converted to vitamin A in the body. They are also rich in both soluble and insoluble fiber!

You can make them ahead of time. Just like sweet potato toast, you can roast the sweet potato slices in advance and store them in an airtight container in the fridge for up to 5 days. When you’re ready to assemble the pizza, just add the toppings and bake until everything is piping hot!

They are easy to customize. If your family loves having a “pizza night” where you all get to pick out your own toppings and sauces, this is even more fun! Each person can decorate more than one sweet potato slice, if you want to try a few different topping combinations.

The flavor isn’t too noticeable. If you’re like me, and aren’t the biggest fan of sweet potatoes on their own, this is a great way to eat more of them. When you slice the potato thinly, the flavor doesn’t compete with the other pizza toppings.

How to Make Sweet Potato Pizza

1. Prepare the potatoes. 

Preheat the oven to 400ºF, then slice the sweet potato into 1/4-inch rounds. The more consistent you are with the thickness, the more evenly they will cook.

(If they end up being a little thicker, closer to a 1/2-inch thick rounds, that’s okay, too!)

Arrange the sweet potato slices in a single layer on a large baking sheet lined with parchment paper. Drizzle a tablespoon of olive oil over the slices, and rub it evenly into both sides of the sweet potato slices. Sprinkle with salt on top.

For a “garlic bread” flavored sweet potato base, I also recommend sprinkling a little garlic powder and dried oregano on top. (But that’s optional!)

Place the pan in the oven to roast for 15 minutes at 400ºF.

When the timer goes off, carefully flip each sweet potato slice over so they will cook evenly. Return to the oven to bake for 10 more minutes, or until the potatoes are easily pierced with a fork.

Note: This step can be completed in advance, if you’d like to have roasted sweet potato slices ready to go for a faster pizza night. Store them in an airtight container in the fridge for up to 5 days.

2. Add the toppings.

Once the sweet potato slices are tender, add roughly 1 to 2 teaspoons of your favorite pizza sauce to each sweet potato round. You can use pesto, marinara sauce, or anything else you can think of!

Finish them off with shredded mozzarella cheese, and any other pizza topping you enjoy, such as pepperoni, red pepper, sliced onion, or Parmesan cheese.

Place the pizzas in the oven to cook until the cheese has melted, about 10 more minutes at 400ºF.

3. Enjoy!

Once the cheese has melted, the sweet potato pizza is ready to serve. I like to finish them off with a little fresh basil and red pepper flakes.

Ingredients
  

  • 1 large sweet potato (about 1 pound)
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 cup pizza sauce
  • 3/4 cup shredded mozzarella

Instructions

  • Preheat the oven to 400ºF and line a large baking sheet with parchment paper. Slice the sweet potato into rounds about 1/4-inch thick. The thinner you slice the potato, the faster it will cook. It's okay if the potato turns out a little thicker, but the more consistent you slice the potato, the better, so the slices will all cook evenly. (Some will be smaller than others based on the shape of the sweet potato, but the thickness of the slices will determine the cooking time the most.)
  • Arrange the sweet potato slices on the prepared baking sheet and drizzle them with the olive oil. Rub the oil into both sides of the potato, then sprinkle the salt, garlic powder, and oregano evenly over the top of the slices. Bake at 400ºF for 15 minutes, then flip the slices over (so the seasoning will be on the bottom now) and bake for another 10 minutes, or until the potatoes feel tender.
  • Once the sweet potatoes are tender, add about 1 to 2 teaspoons of sauce to the top of each slice, and finish them with a generous topping of shredded mozzarella. You can add any other toppings you like at this point, too, such as pepperoni, peppers, onions, etc. Return to the oven to bake until the cheese has melted, about 10 more minutes at 400ºF.
  • Remove the sweet potato pizzas from the oven and let them cool for 5 minutes. Top with freshly chopped basil, if you like, then serve warm. Leftover pizza can be stored in an airtight container in the fridge for up to 5 days. (I don't recommend eating these cold, but you can reheat in the oven for 8 to 10 minutes at 400ºF again.)

  1. These are DELICIOUS! I used miyokos vegan liquid mozzarella, and since i only had really small sweet potatoes i cut them like you do in your sweet potato toast.
