I think 2016 might have been a peak for “bowl meals,” but I hope it’s still cool that I’m on the bowl bandwagon– because bowl meals, like this Vegan Burrito Bowl, deserve to stick around. They’re just so convenient and satisfying!
This vegan burrito bowl with sweet potato “rice” is so easy to make. I whipped it up using my Nutri Ninja® Nutri Bowl™ DUO™— which I had the opportunity to try while working on my cookbook, No Excuses Detox. I love this machine because it fits perfectly into my new book’s budget-friendly theme. It is an affordable multi-tasker that doesn’t take up a lot of counter space, and it actually blends similarly to my Vitamix, which is seriously saying something. (You know how critical I can be of blenders, even when I receive them for free.)
What’s cool about the Nutri Ninja® Nutri Bowl™ DUO™ is that it is a personal-size blender and food processor in one compact machine. I’ve used it to make my morning smoothies, and it breaks down even my toughest ingredients like dates, chia seeds, and ice cubes into a smooth and creamy, milkshake-like consistency. Vegan Burrito Bowl with Sweet Potato "Rice" (And a Ninja Giveaway!)
Ingredients
For the bowl:
- 1 teaspoon extra virgin olive oil
- 1/2 red onion , chopped
- 1 bell pepper , chopped
- 1 clove garlic , minced
- 1 (1.5 pound) sweet potato, peeled and cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon chili powder
- 3/4 teaspoon ground cumin
- 1 1/2 cups cooked black beans , or 1 can drained and rinsed
Optional Toppings:
- Freshly chopped tomatoes
- Diced red onion
- Fresh cilantro
- Sliced avocado
Instructions
- Heat the oil in a large deep skillet or Dutch oven over medium heat. Sauté the onion, pepper, and garlic until they start to soften, about 5 minutes.
- While the veggies are cooking, process the sweet potato chunks in a food processor to create a rice-like texture. Add the riced sweet potato to the pan, along with the salt, chili powder, cumin, beans, and a splash of water to help prevent sticking. Cover the pan with a lid and let the vegetables cook until the sweet potato rice is tender, about 8 minutes.
- Adjust any seasoning to taste, then serve warm, topped with freshly chopped tomatoes, onion, cilantro, and sliced avocado as desired. Any leftovers can be stored in an airtight container in the fridge for up to 3 days.

Note: You can speed the chopping process by using the Nutri Ninja® Nutri Bowl™ DUO™ to dice the red onion, pepper, and garlic. I did this first, then processed the sweet potato rice while the veggies were sauteeing, to use my time as efficiently as possible.

If I had a Ninja, I would TOTALLY make this recipe! OMG! And then I would make riced cauliflower for pizza crust because I have been DYING to make that! I love pizza and the current diet I am on, I can’t have real dough.

I recently tried ‘cauliflower’ rice to make a batch of fried rice. It was amazing! I would definitely use the Ninja for more of that! Love, love, love sweet potatoes, would really like to make this recipe bowl, looks great and I will be making it soon. I would like to make homemade hummus.
I think I could use this for veggie meatloaf combinations, for making humus, for blending soft veggies to make wraps with and of course nut grinding and making nut milks if I had one. I have a Vita Mix but it is large and heavy for me to lift each time I want to use it on my counters (since my kitchen is a little on the small size).

Smoothies!
Can’t wait to have this Ninja in my kitchen. Smoothies are made every day in our home and I’m sure the Ninja would be the plugged in and whipping up smoothies first thing.? During my Sunday meal preps I would like to try ricing cauliflower for our pizza crust as well. I’ve eyed this beast for some time now because I have so many things I would like to try.

The one tool I do not have yet to compliment my diet plan is a processor such as the Nutra Ninja NutriBowl. i think having one of these would take my food prep that extra step I need to continue my weight loss program as everyone knows food especially diet plan food can get a bit boring after a while, Being able to prepare the same ingredients different ways would be a huge help! Oh I would so love to make small batches of nut milk, my morning matcha lattes and small batch chia pudding in this. It’s always hard with the vitamix to do smaller portions. And, I too am skeptical of other blenders. The smoothness you get with the Vitamix is just amazing But if you say so, I’m curious!
Perfect for smaller recipes when my 11 cup is too big! Plus I love the idea of grab and go smoothies instead of needing another container.
I would love making salad dressing in this, so I wouldn’t have to make it in my big bender( it’s difficult to make dressing and single portion smoothies in a huge blender). The small processor bowl would be amazing, too! Oh the dips we could make!

Awesome! I’d make your shamrock shake, for one thing. It is my new favorite smoothie. I love that it tastes like chocolate chip mint ice cream. My food processor is the most used appliance in my kitchen! River cauliflower, dips, soaked grain pancake batter, smoothies and shakes, etc.

I love the idea of being able to make salad dressings in the nutri ninja! Right now I just chop everything by hand because my vitamin doesn’t beak down the garlic or herbs very well and I end up with chunks in the dressing, no fun.
I also love that it handles dates as I use them a lot for sweetening things and currently have to soak them a long time till they are like mush because my food processor won’t evenly break them down and I get chunks again. Would love the opportunity to try this new all purpose blender!

Hi Megan, I love my blender but sometimes a combo of blender/ food processor saves so much time…I would use it to make a vegetable pâté with sauerkraut, soaked walnuts, herbs, leek, roasted pepper…a fabulous recipe that requires a food processor.
