These brownies are about to make your week a lot better.
They are raw, vegan, and pack a nutritional punch! Thanks to all the walnuts, pecans and dates loaded into these bars, you’ll get a dose of fiber, antioxidants, and healthy Omega 3 fats in each fudgy bite.
Now, that’s my kind of brownie.
Raw Walnut Brownies (vegan, gluten-free)
makes about 20 pieces
adapted from Cru’s brownie
2 cups raw walnuts
2 cups raw pecan halves
1 cup dates, pitted and soaked 10 minutes
1/2 ripe banana
1/2 cup cocoa powder
1/4 teaspoon sea salt
2 Tablespoons of water, as needed to facilitate blending
3 dropperfuls NuNaturals Vanilla Stevia (about 36 drops), or to taste
In a food processor, combine all the ingredients and process until well combined.
You will need to stop and scrape down the sides a couple times, pushing the batter towards the blade to keep things moving. Add extra water, if needed to facilitate blending, but you want these to stay sticky–> not too wet! Taste the batter, and adjust sweetness to taste.
I made my brownies 1/2″ thick, to produce a higher quantity and make them dehydrate faster, but if you want a thicker, more traditional brownie, feel free to make them thicker! (They’ll just need a bit more time in the dehydrator.)
Dehydrate at 115 degrees for 3 hours, then use a pizza cutter to score the squares.
(The weird edges make great taste-testing bites!)
Return to the dehydrator for another 2-3 hours, or until desired texture is achieved. I like mine dry on the outside, and still fudge-like on the inside.
Serve warm, with banana soft serve on top, for a totally decadent dessert!
Or, throw them in the freezer for a cold, chewy treat.
*Note: If you don’t have a dehydrator, you are welcome to use an oven at it’s lowest setting, with the door slightly cracked. However, I would recommend skipping the oven all together, and simply rolling the batter into truffle-like balls! Chill in the fridge to set, and you’ll have delicious brownie bites to enjoy without all the hassle! You could roll them in some cocoa powder or shredded coconut before chilling, for an even prettier effect.
