For some reason, weeks following a holiday always fly by for me. I can’t believe we’re already half-way through!
It’s been a busy one, too.
The kind of week that calls for coffee.

So long, Lent!
I missed my juice, though!
A large mixed green salad, topped with sliced cucumbers and tomatoes, dressed with a generous portion of vegan “cheese” sauce <– leftover from our Easter potluck.
Plus, more sliced cucumbers dipped into more cheese sauce. This stuff is good. (and, of course, I’ll share the recipe soon!)
After all that vegan “cheese” at lunch, it was time for real cheese at dinner. 🙂
Mixed green salad, topped with steamed beets, diced zucchini, soft goat cheese and lemon juice.
Followed by a dish of spiralized zucchini noodles, sauteed with mushrooms in a creamy cauliflower & goat cheese sauce. I’m really excited to enjoy these leftovers tomorrow, too!
Bengal Spice Tea!!!!! This stuff is my very favorite night-cap right now.
I like to steep two bags in a half cup of boiling water, for a concentrated flavor, then fill up the rest of the mug with warm almond milk for a “chai latte” flavor.
