What I Ate Wednesday

Morning

breakfastI started the morning with a small glass of green smoothie (leftover from the one I make for Austin before work), followed later by half a box of organic blueberries.

When I felt hungry later in the morning, I polished off a bowl of chia pudding! I like to blend it all together, so it’s more like a porridge, rather than tapioca-textured. This batch was made with almond milk, vanilla and maple syrup– together, it tastes like a bowl of melted vanilla ice cream.

Lunch

lunchMixed green salad, topped with chopped cucumber, beets and oven-roasted tomatoes, plus some shredded raw goat cheddar and homemade Greek dressing.

Followed by 2 pasture-raised eggs, sauteed with spinach, tomatoes and a sprinkling of raw goat cheddar.

The folks at Suja Juice sent me a complimentary juice package this week, and I couldn’t be more excited about their cold-pressed juices. What makes these juices unique, is that they use a High Pressure Pascalazation technique, which keeps their products raw and many of the enzymes in tact, but also the extends shelf life. Unlike most juice packages, which must be consumed within 3 days, these juices can last up to 30 days in the fridge. Perfect for those of us who may not want to complete a juice fast, but would like to regularly include juices into a busy schedule.

This Fiji flavored green juice was perfect– not too sweet, but not too heavy on the dark greens, either. Yum!

Dinner

Dinner was pretty simple! Baked wild salmon with a side of sauteed Brussels sprouts.

Followed by half a bottle of Vanilla Cloud Almond Milk, also from Suja Juice, for dessert. Austin and I shared the bottle, and both loved it! The flavor reminds me of Honey Nut Cherrios, in liquid form.

    & i used your balsamic vinegar brussells sprouts recipe for dinner last night ! i was a brussells sprout virgin !! can you believe i had never tried them before ??? i was always too scared. but i received them in my co-op box so i gave it a try & with your recipe— i LOVE them now :)

  • i’ve actually heard about that vanilla cloud milk on the east coast! suja are making a name for themselves!i have tried to like chia but i just can’t get past the goop-y mess. the only way i could stand it was blended in a smoothie but there are so many other great super foods so i don’t miss it too much :) i am having cauliflower rice paella, tinned salmon or sardines in evoo & huge salads of leafy greens and handfuls of trader joes ‘super 8′ chopped veg. i’m busy this week so it works!

    • I don’t like the goopy texture, either. That’s why I blend it! It reminds me of Cream of Wheat. :)

      The Vanilla Cloud Milk is SO good. No wonder people are talking about it!

    For breakfast I had a banana and some blueberries, I eat all organic of course! For lunch a bowl of spaghetti squash tossed with a little fresh garlic sauteed in coconut butter with a drizzle of sriracha sauce, very yum, actually a bit addictive! For dinner I will have a nice green salad and I am making a pot of vegan chili! And sometime this week I am going to make veggie sushi rolls with my homegrown sprouts and avocado, yum!

    And I love your site. I have made many of your recipes, a lot of your salad dressing recipes actually, love the honey Dijon! I love making fresh dressings, You can not beat them! I first found your site looking for a vegan, gluten free cookie and found your Paleo Chocolate Chip Cookie recipe and fell in love! Chocolate chip cookies are my all time favorite dessert. Love that recipe! There are so many more recipes I can’t wait to try!

  • I’ve got a Suja cleanse coming up week after next. Can’t wait to try them! I knew their juice lasted awhile, since it’s sold in some WF stores, but 30 DAYS?! Are they sure? BluePrint uses HPP too, but they still say only 6 days for their juices. Interesting, I’ll have to ask them more about that. Looking forward to that Vanilla Cloud Milk especially! Love that they use honey to sweeten. ;)

    • I’m really impressed with the juices so far. Very tasty, and they seem more fresh than some other HPP bottles I’ve tried. I’m not sure how the 30 day thing works, but I’m not sure if I’ll really test that out… they won’t last in my fridge that long!

    This day looks awesome! I was at a restaurant the other day and got the goat cheese salad and it came with roasted tomatoes and red peppers on it. Inspired, I’ve been throwing a few tomatoes in the toaster oven for a few minutes to put on salads…great minds!

    I’ve been eating bread lately…TJ has one that’s organic whole wheat, water and salt only and I slice it thick and toast it. I was out of the habit of bread for a long time and now it’s crept back it…I’m sort of debating whether to keep it in my life because it tastes so good and is awesome for sopping up dressing at the end of a salad or with eggs. Food combining has sort of blown out the window the last few weeks because of it and I’m torn :( I’ve actually lost a little weight though so I’m happy :)

    That chia pudding looks and sounds delicious. I’ve had a package of chia seeds for a couple months and have not known what to do with them! Do you have a recipe for how much of each ingredient you used? I don’t have a Vitamix or blender strong enough to make my own almond milk :( so I guess I’ll have to get the store brand.

    I’m getting ready to go on vacation so I’m following a pinterest “Lose 10 lbs. in 7 days” thing. Breakfast was 2 oranges; lunch was 0 point veggie slaw in a beautiful lime dressing and 2 chicken thighs; dinner was 2 thighs with broccoli & cauliflower with butter & lemon juice. Lots of herbal tea and water.

    Tomorrow: miracle cabbage soup all day! I’ve lost 4 #. I may try HED (high everything diet) when I get back!

    I had a green smoothie of spinach, water, banana, and kiwi first thing this morning and just finished a bowl of chia pudding inspired by you :)
    almond milk, chia seeds, maple syrup and some shredded coconut! I forgot how much I loved chia pudding so i’ll be snacking on that some more this week!
    I’m going to be making your veggie chili and pumpkin pancakes this weekend (for my 4 year old) and I’ll be enjoying my yummy salad bowl concoctions with some of your green goddess dressing. I never get tired of the random mixture of foods and sauces. mmm..
    I am amazed at how great I have felt and how much my skin has improved just by starting my day with the green smoothies. Ive had them almost every single morning for about 3 weeks now and I cant see me turning to anything else. Except juice on the weekend when I have more time to make them.

    You are a lucky woman! I just made a trip to WF to try the suja juice and they are spendy! Unfortunately, they only had maple cayenne which sounded a little too something for me, so I got a kombucha instead :)

    I’d love to try that green one sometime! Maybe I can find it for a super bowl splurge…we’re probably the only group that would be drooling over green juice during the game, haahahaha!

    The colors in your salads are gorgeous!…and the wild salmon..with the ‘sprouts…just the right choice for a weekday evening…Any chance of getting the chia porridge recipe?..I second the reader who “misses” the Cream of Wheat “vibe”…yours looks “delish” & “nutrish”…

    word on HPP is no go. Anything that doesn’t rot in its normal time as a whole food is not something you want to consume…
