As we recover from all of our Halloween festivities (my kids went trick-or-treating 3 different times last week!), I’m looking forward to making some extra nourishing meals this week.

I’m craving this lentil soup, so I’m going to make a big batch as part of my meal prep in the hopes that my daughter will also share some of it with me for lunch. She doesn’t enjoy eating salads right now, so soup is a better option if I only want to make one meal for both of our lunches. (I always try to avoid making something separate for her when I can! I already have to pack a separate lunch for my son every day before he goes to school.)
Here’s my dinner plan for the week:
- Monday: Instant Pot Lentil Soup & Roasted Vegetable Salad (the salad recipe is in Everyday Detox)
- Tuesday: Wild Rice & Mushroom Stuffing + roasted butternut squash on the side
- Wednesday: Garlic Parmesan Spaghetti Squash with Chicken
- Thursday: Instant Pot Vegan Mac n’ Cheese
- Friday: Creamy Vegan Arugula Soup with side salads
- Saturday: Take-Out (I never cook on Saturday night)
- Sunday: Pizza Stir Fry

My Plan for Breakfast & Lunch:
I’ve been craving this Peanut Butter & Jelly smoothie lately for breakfast, but we still love this coffee smoothie, too. And the Blueberry Detox Smoothie! When we’re not doing smoothies, I’ve been having the freezer waffles heated up in my toaster (recipe is in No Excuses Detox) or some Instant Pot Steel Cut Oats.
I almost always lean on leftovers for lunch, so this week I’m planning on using leftover Lentil Soup and that roasted vegetable salad for lunch until we run out of it. The Wild Rice & Mushroom Stuffing and Mac n’ Cheese also make excellent leftovers, and my daughter loves them, too– so it’s a win-win.
